I have never used either Erytrhitol or Stevia. I took Lauren's Paula-Deen-style gooey pumpkin cake, and used Splenda and Diabetisweet.

My cheesecake recipe is Splenda-only.

Sorry KB! My brain must have confused your cheesecake recipe with Lauren's Gooey Pumpkin Bake thingy!

Ok, so my original question is still open!!

I made half a batch tonight and used the brown diabetisweet - liked it much better not that taste it had before. So Wed night will make a full batch to take home for Thanksgiving.

Thanks

I just wanted to report that I subbed the Splenda and Diabetisweet with 3/4 c Erythritol and 1/4 t. pure stevia extract powder. They turned out great!!! Everybody loved them, and no one could tell they were LC!

I have Stevia packets, is that what you mean? 1/4 t of a packet? I made these last year and it was the first LC treat that my DH did not like too well. I think it was the Diabetisweet, I had just bought it, have not used it since. I would like to try your blend.

I, BTW, loved these pies. Maybe DH was too used to the original taste of the high carb ones. He doesn't LC ordinarily, but loves to eat, so he eats mainly what I eat.

Diana, all of the packets contain fillers, and would not be concentrated enough.

I believe 1/2 t. of pure extract powder is equal to one cup sugar, so the 1/4 t. would equal about half a cup. Along with the erythritol, it balanced out nicely. HTH!!

I just tried these and their great! These are very much like the high carb "pecan tassies" I used to make.

I'd love more recipes for the little tart shells.

I'm thinking of making a sf lemon curd to fill these.

I make savory things with these shells too, and when I bring them to parties people rave about them.

I can't remember if I posted this in this thread or another one, but I make a crab dip and put them in the shells. They are to die for! That might give you some other ideas!

Tooter, I don't know who you are but thanks for such a good recipe. I had to try these out before TG. They are dangerous with a cup of coffee!! I ate 4 in a flash!!
These would be really nice in a cute little Christmas can to give to your favorite lowcarber as a gift.
Here's a picture of mine. I only had Splenda for the sweetner. They turned out great.

I made these today for Thanksgiving and they were a hit! I don't normally eat pecan pie, but my dad loves it, so we tried it out.

I did have to tweak it a little, though. I could not find diabetisweet anywhere, so I used about 2/3 cup of splenda and 1 tablespoon of flour to thicken.

I also couldn't find almond flour already made, so I just beat some almonds to death.

Like I said, they were a hit! Thanks Tooter! I'm going to try using other fillings, too!

Lisa, do a google search on Healthy Indulgences then just look up the recipe on her site. It's under pumpkin gooey butter cake.

These pecan one look absolutely amazing. Thank you for the bumps since this thread started in 2006!
