LC Funnel Cake

Remember those yummy funnel cakes at the fairs? Here's a low Carb version.Not for INDUCTION
3 TBS water
2 eggs
2 tbs cream
1 TBS oil
1 cup whey Protein Isolate
1 Tbs baking powder
1/3 c sweetner (splenda or any other of choice)

Pre-heat oil to 375F,Combine water eggs and cream, and oil. Mix thouroghly.
Add the WPI,baking Pwdr, and sweetner. Pour into a funnel (remember to put something over the funnels hole.)then with the mix go back and forth in the oil
till it floats,then flip over and brown the other side. You may add whipped cream on top, or SF Jelly or Erythritol sprinkled over the top. You could add blueberries or whatever you like to the top of this and then whipped cream.

I am sorry but I do not have the nutriton counts and no way to get them.
If someone can do this it would be WONDERFUL!

Please let me know if you like them as I am still on INDUCTION and haven'ttried them yet.I got the recipe from one of the LC links it was posted by Mary. But I will be on OWL next week I may give them a try then.

In my notes abouve I posted I was sorry no nutrition values.And that I had not made them since I was still on INDUTION> HOWEVER you may do a WEB search for funnle cake photos and you can see what they look like. They taste like a donut not cakes.It is just what they call them. ANd normally they have powdered sugar on top.They really are good.

You could probably use CarbQuick too I do not know. JUst experiement. And as far as the Carbs it would really depend on how big and how many you made from the batch.

I DO KNOW THAT MY ISOPURE WHEY PROTEIN ISOLATE HAS 0CARBS. SO THERE COULDN'T BE VERY MANY WITH ONLY THE EGGS AND CREAM AND SPLENDA IN IT.

Hi Berta...just wanted to say GOOD LUCK at your weigh in, and hope you can move on to OWL with confidence!

Oh, my...I'm still learning after nearly 6 years of LC'ing..I never would have thought about using Whey Protein Isolate as the "flour" in Funnel cakes..THANKS!

At our local Fairs here, not many funnel cake vendors, but lots of Elephant Ears and Indian Fry Bread available...very similar stuff tho.

About a year ago, we were making up some deep fried items using CQ....you might enjoy taking a look at this Thread:

Ahhhh, Berta...I am not the person to give you advice about the Whey, as you move into OWL...because I have not done Atkins. (this is a question for the Atkins posters on the Main Lobby Board, perhaps?...and usually you get fast answers there, too)

I will direct you to the Atkins site that explains HOW to move into OWL from Induction, it might be helpful to you...

Thank you so much for that link.It has a world of info for me!!Looks as if I might have to wait on the funnel cakes. But it is always nice to have something to look forward to However my Whey Protein has 0 carbs?? So perhaps I will post the question

Berta ~ If your whey protein has zero carbs, then you can eat these.

Just a question, it is whey protein isolate and not wpi, right? I ask because I used to think that when people posted wpi, they meant whey protein isolate, when in fact they meant wheat protein isolate, which is a completely different product and no one bothered to let me know for a very long time.

SB I looked at the recipe again and it is whey Protein Isolate NOT Wheat PI. So thanks for pointing that out ot me I would not have known the diff.

Great Berta, please let us know how they turn out. I think I have some of that stuff around here too. I have never eaten a funnel cake in my life. I've seen them at fairs and watched them make them (they smelled divine) at the Wild Hog Festival, but never ate one. I'm most curious.

Okay I made some!!!
You are not gonna believe how wonderful these are OH MY GOODNESS GRACIOUS LANDS ALIVE

The only problem I had was at first i didn't think it was going to work but I just kept adding the mix and it took off! Then the other problem was flipping it t turn the other side.But i got it done. That recipe made twp the size of a dinner plate!I put cinnamon on top and Land Of Lakes Splenda sweetend Whipped Cream in the can on top MMMMMM!
This is definetly a KEEPER!

PLEASE TRY IT AND LET ME KNOW WHAT YOU THINK> I won't be upset if you dont like them as we all have different tastes.

I still can't believe this is hardly any carbs but all it would have is the 2 eggs and the Splenda but I used Liquid Splenda about ten drops!

AGAIN NO I dont have a picture I tried to paste and copy a photo of a funnel cake here but neither me or my DH could get it to work
Just go to it there isn't that many ingredients to waste if you don't like them.
But use the Whey protein Isolate As I use Isopure and just noticed it is only 50 Whey Protein Isolate so I think that is why tehy were a bit tough.
Also next time I will make about four instead of two. Twere two big and I could not eat all of even one!

PLEASE AS I ASKED BEFORE TRY THESE AND LET ME KNOW WHAT YOU THINK

I just made one!! I only had chocolate whey, but that actually tasted good. I made the first one way too big so it was too hard to flip over without breaking and was a bit doughy in the center. The second one worked much better. I sprinkled with cinnamon and did the whipped cream thing. Excellent. I loved how crispy they got!!

Thanks for sharing the recipe. I missed these!

Thank you for tryingthem. I made mine to big also and had trouble flipping I think perhaps if we covered the skillet they would set better on top and then flip them.I am adding cinnamon to the batter next time and no oil!As they were a tad to oily for me.But oh they were good.
Mine was a bit tough but I just notice that what I used is only 50WHay proetein Isolate.I used Isopure Powder and at the bottom is has 50% Whey protein Isolate.So I think that is why they were a bit tough.

Are y'all really using a whole TBLS of Baking Powder in these? If so, is there any after-taste in the finished funnelcake?

Thanks, Berta...OK, NO Oil, and add in Cinnamon, right???

Couple thoughts..maybe a drop or three of Vanilla in the batter..and how 'bout filling up a big plastic bottle with a pointed nozzle on it, ..better control of the batter than a funnel..might have to cut the nozzle-hole larger, depends on the thickness of the batter..I tend to ramble..

YES and
I didn't detect an after taste but I am sure you could cut it back if you choose to.It make about four medium or two large funnel cakes.

I've already changed my mind about adding in Vanilla extract....instead, I'll use 3 TBLS sf Vanilla DaVinci syrup to replace the Water..then cut back on the 1/3 Cup sweetener amount listed.

these were actually already pretty sweet from the whey protein isolate but you will just have to experiment. I think the botle nozzle is a geat idea

I have found adding cinnamon to this batter makes it much better.
Also do not cook for very long just until lightlygolden brown and cover the skillet with a lid, it helps cook the top before you flip it over.If you cook it till it is dark it will be tough as a leather shoe

I made it with only 1/2 cup whey protein isolate AND JUST HALFED THE RECIPE This was ZERO CARBS
DOWN WITH CARBS

Berta, how much oil do you put in the pan? I assume the 1 T of oil in the recipe goes in the batter, right?
