stuffed peppers

I keep wondering if one could make stuffed green peppers and substitute chopped cauliflower for the rice? Anyone know of a good recipe?

to make them lc i just use a mix of hamburger meat and italian sausage and add onions and celery and omit the rice completely - but i do use ketchup on the top

There is a recipe on LindaSue's site called "Make Me Stuffed Peppers". Haven't tried them yet though the picture looks delicious. Never miss when I use one of her recipes!

I just use my regular meatloaf recipe, which has raw wheat bran in it - I never miss the rice at all!

Use Shirataki

I made some great stuffed peppers the other day using SHIRATAKI noodles in place of rice. I used my Pampered Chef chopper to chop up the Shirataki noodles to rice size. It worked GREAT!!!! If you haven't discovered Shiritaki, please do. I just recently started using them, and wish I would have started long ago. There's a huge thread about them on the main bulletin board. They have almost no carbs and almost no calories. They're great for many things like these stuffed peppers.....but Dreamfield's they're NOT.

I make them with the hamburger and sausage and add some mushrooms, black olives, onion, a small amount of tomato sauce and mix in some mozzerella cheese. They are yummy, and I don't miss the rice or stuffing.

I just use a little grated caulif. Sauce - tomato sauce, a little vinegar and brown sugar twin or a little splenda.

No recipe

Sorry MaryAnn,
I don't ususally cook by recipes....just by what I have on hand.
This time I used cooked ground beef, onion, spices (Tony Chachere's), cheese, the Shirataki chopped up like rice, and (I think) an egg. I just put the stuffing in halved peppers, topped with cheese, and baked until done.
You could really use any stuffed pepper recipe that calls for cooked rice and just substitue the Shirataki for the cooked rice . The Shirataki will keep your recipe more moist than the rice, which is nice!
