Breakfast Casserole or Quiche reciepe

Anyone have a good one they can share? Im looking for something that I can make and will last in the fridge for a few days. Its always so hard for me to make breakfast in the morning! TIA!

These are good reheated, and quick to make/take.


Dizneegirl's Scrambled Eggs to Go

1 lb. sausage
12 eggs
8 oz. shredded cheddar cheese

Cook sausage until crumbly. Let cool and add eggs and cheese. Mix together and fill greased muffin tins. Bake at 350 for 30 minutes, or until golden brown and set.

Also this one posted by CarolynF (big thank you!!!) is my favorite!

SPINACH QUICHE --this is Bruce's recipe..I think it looks great..of course, you can
cut back on the cheese if you want..and use Swiss or a mixture of other kinds.

1 large onion -- chopped
1 tablespoon oil
1 package frozen spinach -- chopped
5 eggs -- beaten
1/4 teaspoon salt
1/8 teaspoon black pepper
12 ounces muenster cheese -- grated

Thaw spinach and press dry.

Saute onion in oil in a heavy skillet until tender.

Add spinach and cook until excess moisture evaporates. Cool.

Combine eggs, cheese, salt and pepper. Stir into spinach mixture.

Pour into a greased 9-inch pie plate and bake at 350 for 30 minutes or until set.

8 servings. Per Serving: 223 Calories; 17g Fat (69.7% calories from fat); 14g Protein; 3g Carbohydrate; 1g fiber.

I make a "Breakfast Pie"

1 lb susage scrambled
6 jumbo eggs
3 cups half n half
salt & pepper to taste
shredded cheese


put scrambled susage in bottom of quiche dish, mix the eggs and half n half with salt & pepper till well mixed add to quiche dish, then I sprinkle with shredded cheese on top, what ever flavor I have, some times I add some veggies, then bake at 350 about 40 minutes, easy breakfast all week

I like all these, currently making a hybrid of dizneegirl's and whatever I have on hand, like sun dried tomatoes, pepperoni, Canadian bacon, you have it, I throw it in. . .

And don't forget the Impossible Pie series with Carbquik, love those too.
