Charski's pumpkin butter thread??

I thought there was a whole thread on this but I searched for 1/2 an hour, even went to the recipe room, no luck.

Anyway just wanted to report that I finally got around to making this and it is wonderful! Didn't have the Atkins breakfast drink so subs Alpine s/f cider mix and in place of the variety of spices I used 2 Tbsp. pumpkin pie spice.

I ruined my CJ's breakfast pudding by over cooking it this morning, so it had the nasty "eggy" taste . The pumpkin butter was just done, so I stirred a tablespoon into the pudding and saved the day. It was YUM! No trace of the "eggy-ness" left...

Thanks Char, for the recipe. I'll be using it lots.

For some reason I thought the pumpkin butter was on a thread of it's own.. Gotta check out the apple butter recipe too! although it takes me a while to get to all the new recipes. There are so many to try. I it...

This stuff makes a really good pumpkin whipped cream too. (need a licking my lips guy!)

I whipped 1/4 c. heavy cream then folded in 1 Tbsp. of the pumpkin butter and served over cake. Really, really good! This made enough to "frost" 1/4 of an 9x9 cake.

Pumpkin butter makes a delicious ice cream too! We had about a quart of vanilla ice cream in the freezer and about a 1/2 cup of the pumpkin butter leftover. Dh had seen the HC pumpkin ice cream at the store yesterday and I thought "why not try?" so I softened up the ice cream and stirred in the pumpkin butter...YUM! It is GOOD that way. Did have "chunks" of the butter frozen into lumps, though. Next time I make ice cream I think I will stir a 1/2 cup of the butter right into the mix before freezing so it would be incorporated better. I froze most of the pump/b in 1/2 cup containers so this should be easy enough.
