Cucumbers Masquerading as Apples
 
Well,

I went to make my Apple Crisp and my zucchini had gone bad..SO..I eyed
a cuke and peeled and sliced in quarters..seeded and chunked it. and cooked it in some Apple Cider Mix with water, etc..Hey..not bad at all...You need to cook it until it becomes slightly soft..Then add your topping..Mine is in the oven now..

I just had some..and no kidding it was wonderful...and I think there are fewer carbs in cukes...?

I think cucumbers are like 3 carbs per cup and zuch's are about twice that.


(And I'm confused about the proper spelling of that green squash) ROFL.

Tasted mine right out of the oven just now. Really good!

I used chayote. I couldn't find the Apple Cider mix BUT...I had Atkins Morning Start Apple drink mix-boiled the chayote in the drink mix with about a cup of water and cinnamon.
Topping I subbed almond flour for 1/2 the flax meal and ....having no walnuts, used pecans.
--I reserved some of the 'apples' to heat up and top with cheddar cheese...one of my favorites has always been apple pie with melted cheddar.

I had the other half of my Apple (cuke) crisp for breakfast...Gosh..those cukes have the same texture as apples..a slight bite..I'm sure you could fool lots of people..

I have a hard time finding Zukes locally (Queens,NY) thus the Chayote (go figure....chayote in abundance, but no zukes) but can always find cucumbers...I'll give that a try next.

Carolyn, question. Is your apple cider mix sugar free? I found a box of it at Wallyworld but it was quite high in sugar (for me anyway). I'll check another WM to see if they have a sf version.

I really want to try making this 'apple' crisp so badly, can ya tell :)

ETA: answered my own question, found your recipe, Carolyn. Nevermind. Rats. Hope I can find a sub for it. The recipe sounds so good right now.

24: Yes, it is SFree..but..someone mentioned that they used Celestial Seasonings Apple Cinnamon Tea for their water base..Of course, you would have to add Splenda, and probably more cinnamon for flavor..

I'm anxious to see how people liked it with the cukes...

Just made some with the cukes, and wanted it in a hurry, after cooking on the stove I nuked the "apple crisp" for a minute and then put on some whipped cream. OMG It was delicious :up: :up: :up: Thank-you Carolyn. It is definately a warm comforty food

Carolyn, I found the sf version of apple cider mix and tried it with just cukes (no crisp yet) YUM. That is a tasty dessert. I did crockpot them, put in for hour, 3 packets of cider mix, cinnamon, few drops of fiberfit and 4 cukes cut up. Can't wait to try it in a crisp with flax seed/almond flour.

Bonus: House smelled like Christmas too :)

I just put 3 cukes in the crockpot with 3 pkgs of the Alpine Cider Mix, cinnamon, etc.water.I'm thinking I will leave mine on for several hours..To get it thicker..you can remove the lid, so some of the water evaporates..

Cukes were .38 at Wallie..

I did find it too thin so next time I will leave the lid off, as you suggest. Can't wait to make apple crisp again!

I gave dh a tase of the "cukes"..and he thought the "apples were a little cinnamony"..so I guess it was a success..

Okay..I just solved my thin sauce problem ..by adding 1/2 tsp. of guar gum to the sauce..I removed both the cukes and the cider mixure from the crockpot and then cooled it as I was going to use it tonight..whisked some guar in the
cold cider..and it thickened up really nicely...Then put the apples/sauce in the baking dish and added the topping..and baked it..

Just American cukes..I peel them..slice in half lengthwise..and I used a small melon baller to scrape out the seeds..then chop up the cukes..

I'm sure English would be fine, too..they have smaller seeds or are they seedless??

I tried it with the CS Apple Spice Tea and I didn't like it that much... it was OK, but not great. I can't find the SF Apple Spice stuff anywhere.

Look in your regular grocery store, in the cocoa aisle as Carolyn mentioned. Walmart didnt' have it here but the local hannaford did.

I'm making the crisp tonight, Carolyn. Need to thicken my juice up so I have to get some X gum.

This is a tasty dessert. I love the topping.....added a little almond flour to mix it up a bit.

Made them in little buttered ramekins.

Sounds yummy. Is there anything you can replace flaxseed meal with for the topping? Perhaps almond flour?
