What is oat fiber used for?

Kevin or Scott or other resident food science genius!,

What is oat fiber used for in LC cooking? Kevin mentioned it with regard to making bread. What properties does it contribute to a recipe? Or what would it substitute for?

Anna, Oat fiber is zero net carbs. When subbed for a portion of the flour in a recipe you keep the bulk but lose that portion of the carbs.

For example if you were using a cup of Carbalose flour in a recipe at 19 carbs a cup and replaced 1/4 cup with oat fiber, your mix is now only 14 to 15 carbs.
You have lowered your carbs and still preserved the bulk. If you find the right mix you can have a very low carb bread with a good taste and texture too.
The trick is finding that mix.

You also get all the health benefits associated with more fiber in your diet.

How does the texture and taste of oat fiber compare to regular oats?

Has anyone used it to replace oats in granola or cookie recipes and give simular results?

no, the texture is nothing like regular oats. It is a very fine floury texture. A 1 for 1 sub of oat fiber for oats would have you sitting on the pot most of the day....

You can't really sub oat fiber for oats in cookies, granola, etc...texturally it wouldn't work, but maybe for a small portion (1/4)?
I use oat fiber for breakfast, mixed into cottage cheese with shreded unsweetened coconut and a drop of liquid splenda.

I was reading about oat fiber earlier and you can substitute up to 1/4 of the flour of a recipe with oat fiber. The best combination is if a recipe has 4 cups of flour, is to substitute with 3/4 of a cup of oat flour and the rest is regular flour. Of course to make it low carb, ya have to figure out a great mix. Just wanted to say that the article I was reading substitites a little less than 1/4 of the flour in the recipe with oat fiber.

I've started adding a little oat fiber to my breads to reduce the carb count; I was starting with about 10% of the total--sounds like I can increase that. Great.

No, oat flour you can buy in many grocery stores. You can get the oat fiber from Netrition.

Oat fiber is all fiber; oat flour has alot of carbs.
