Dessert

I have a company function tomorrow and want to make a low carb dessert. Any suggestions? I made Beachgirl's Cheesecake last year and it was a huge hit (even though it annoyed me when non lowcarb/diabetic people ate it and complained that it wasn't sweet enough, etc.). I thought about a carbquik pound cake. Any other idea?

Shawneesioux's lemon pound bundt cake is killer good! There is a big ol' thread on it with lots of variations - let me see if I can find it and bump it up....

Make the lemon pound cake recipe Char recommended then make a strawberry trifle with it! All low carb/no sugar added whipped cream/berries. be yummy and purty

Those sound great!

My only problem with the peanut butter pie is that I don't have erythritol. Can I use something else?

That lemon bundt cake looks amazing. However, I don't have PolyD or vital wheat gluten. And, there's no way any place around here will carry them.

Thanks for the ideas! And, if I don't make them for tomorrow I will be making them. They both look delicious!!!

Okay..this is my all time winner recipe:

Brownie Torte..it's fabulous..and you could serve some sliced strawberries or chopped almonds on top..

Let me find it for ya..

This is one of the best LC desserts I have ever made. I took a regular
recipe and switched it to LC..You can double this and then you could put this in a 9 x 13 dish..It easily serves 16..

Brownie Torte

Brownie Layer:

3/4 cup Carbquik
artificial sweetener to equal one cup
1/3 cup unsweetened cocoa
1/2 tsp. salt
1 stick of butter OR 1/2 stick of butter and 4 Tbs. coconut oil, softened
2 eggs
1/2 tsp. vanilla

Preheat oven to 350

Grease an 9 inch square pan (for single recipe)

Put all ingredients into a bowl and mix for about one minute. Pour into a
prepared pan and bake until done..around 15-20 minutes.

Cool in pan. Then crumble brownies

Pudding Layer:

2 small packages of instant sugar free chocolate pudding
3 cups of Carb Countdown Milk

Creamy Layer:

1 1/2 cups of heavy cream, whipped OR
one 8 ounce Cool Whip (if you use that)

Toppings: crushed sf candy bar/chopped pecans

Assemble:

In the bottom of a serving bowl put 1/2 of the crumbled brownies
Then layer 1/2 of the pudding, then 1/2 of the whipped cream or Cool Whip
Repeat..ending with the whipped cream. Shave or crumble a sf candy
bar on top for color and add some chopped pecans if you like.

Refrigerate for at least 4 hours..This recipe above will serve 8
