Strawberry shortcake recipe?

Anyone know of a good LC strawberry shortcake recipe? I can't seem to find a good one anywhere.

I made this over the weekend. I just buy the sugar free angel food cake and top with sliced stawberries sweetened with splenda (or any sweetener) and homemade whipped cream. Very easy and very good.

Thanks guys - I'll check both of them out. I've been craving strawberrry shortcake something terrible this past few weeks. Never thought to look for sugar free angel food cake. I wonder if it will be hard to find around here.

I've been making it lately using the Atkins lemon poppyseed muffin mix - I have a bunch of those in the cupboard, I'm not even sure if you can buy it anymore??

Anyway I bake it in a 9" square pan instead of muffins, split and fill with strawberries and SF whipped cream.

Don't know if that will help you or not!

Darn, I have loaned out my DANDR. There is a recipe in there for the perfect substitute for those little shortcakes sold for strawberries. I checked online at the Atkins site but didn't see it. Maybe someone can find it. Trouble is it has a funny name. Seems like it is something like Sweet Cheese Snack. Sorry I can't help more, this would be perfect for you. I make them in my muffin top pan and my family loves them. Better get my book back.

I get the sugar free angel food cake at SuperWalmart, but I have found it at other grocery stores as well. Something else that's good and quick is the 3 minute chocolate cake. I make that sometimes and split in half and use for the base for strawberry shortcake. The chocolate pairs really well with the berries. I think there is also a vanilla version of the 3 minute cake. I can find that and bump it if you're interested.

There is a recipe in the CQ thread for shortcake. It's basically just sweetened biscuits anyway.

I used half and half instead of carb countdown this time, and also used about 1/2 cup of almond flour and the rest of the
2 1/3 cups was carbquik. Enjoy!

You said you used half and half this time. Was it also 1/2 cup? I have half and half but no carb countdown milk. Do they measure the same? Thanks

[COLOR=Red]You could replace 1 stick of butter and use 1/2 cup sour cream or 1/2 cup cream cheese instead.[/COLOR]

"Pound Cake"

Ingredients:
1 cup butter (2 sticks) room temperature*
1 cup Splenda
5 eggs - at room temperature
2 cups almond flour
1 teaspoon baking powder
1 teaspoon lemon extract
1 teaspoon vanilla extract


Cream butter and Splenda well. Add eggs, almond flour, baking powder. Add lemon and vanilla extracts. Pour into greased 9"-10" Springform pan (or 9" round cake pan) and bake at 350°F for 55 minutes.

I use them interchangably, so yes, 1/2 cup of half and half would work fine.

Well...didn't get to make my shortcake last evening because I went to the grocery and bought all of the ingredients except for guess what - the strawberries! LOL, silly me.

Tonight though...I will most definitely be chowing down on some shortcake.

I made LindaSues pound cake last...yummy. It was better than the pound cake I made before lc. Portion control will be a major issue. I mashed strawberries, mixed in a little da vinci and topped it with whipped cream. Dessert again tonite..

Oooooh! You're making me TOO hungry - I can't wait to make this tonigiht!!!!

Another question: how to I make the strawberry glaze sauce? Other recipes I have seen call for corn startch. Rather than just top with strawberries I do want to put a glaze over it as well.

OK - finally made the shortcake last night and it was DELICIOUS! Couln't stop myself and had two helpings of it. The almond flour was bloody expensive though...

Sorry it took me so long to respond. I have a son graduating in 2 days and have been swamped. I don't make the angel food cake, I buy it at Walmart. They have carried this for a long time. I have also seen them at other stores. At Walmart, it's right by the regular angel food cakes in the bakery.

Oh yea, I got one the Angel Food (sugar free) cakes at Wally World, so good. Funny I used to hate w/a passion Angle Food cake before this way of eating. Loving it now
