Low-Carb Blackberry Cobbler.....

Okay...I done the unthinkable!!! I made a lo-carb Blackberry cobbler!!! Thank God its gone!!! My husband had a blueberry cobbler in the oven when I got home from work. I nearly died. I knew I wouldn't be able to resist. So I remembered I had some blackberry's in the freezer from last summer. I thawed them out and sprinkled them with splenda and a spoon of Carb-quick. Then mixed 1 cup carb quick with about 1/4 cup of splenda and a little cinnamon. I added enought heavy cream to make it pourable. I placed my berry's in a small cake pan and poured the carb quick mixture over the top. Dropped a few slices of butter on top and baked until the crust was done and brown. This was HEAVEN!!! So my question is....How bad was it? Carb wise? It was sooo good that I ate it twice a day until it was gone. With whipping CREAM!!! OH MY GOD!!

I felt sooo guilty afterwards!!! It only lasted me 3 days. But it was like the old fashion weeping crust cobblers my mom use to make. Honestly....I was thinking about trying it again with strawberry's or unsweetened fresh peaches!!! Oh God...I may have become addicted!

Lindasue........2 cups fresh frozen blackberrys
1 cup carbquick + 2 tablespoons sprinkled over berry's
1/4 cup slenda + 1 tablespoon sprinkled over berry's
1/3 to 1/2 cup of heavy cream
3 tsp's melted butter
1 tsp cinnamon


I was hoping you were lurking about. I knew you could figure this one out!!! Oh is was heavenly!!

Roeluvsparis..........I was like you!!! It's getting close to berry season here and I could hardly wait!! I could even eat them with heavy whipped cream and splenda just sprinked on top!! You know it can't be as bad as eating the REAL thing!!!

You guys are going to have to STOP!! Your making me want to run home and make another one!!! I was sure that was going to be the death of me this weekend!!! This was the best thing I have eaten since starting this WOL!!! I've sure been eye balling the strawberry's at the grocery store. They may be next!! But doesn't sound nearly as good as what the blackberry's were.

I googled and it looks like about 18 net carbs in a cup of blackberries. I think blueberries have twice that, so probably a good choice!

I think blueberries have twice that, so probably a good choice!
BLUEBERRIES, RAW 1 CUP Calories: 80 Carbs: 20 Fiber: 1

So net for 1 cup of unsweetened bluesberries is 19

This is in the oven right now. I used blueberries and I had to use almost 1 cup HWC to make carbquick pourable. Will let you know how it turns out.

Not impressed. Although DH likes it. I don't care for carbquik so maybe that is it.

Yes, for this almond flour would work.

If I was going to make berry cobbler I would use these ingredients for the cake part assuming you are making an 8 or 9 inch pan of cobbler.

1-1/2 cups of almond flour
1/2-teaspoon baking soda
1/2-teaspoon baking powder
pinch of salt
1/2 cup Splenda
1/3 cup of sour cream
2 eggs
2 teaspoons vanilla

Mix it all together... Drop it by spoonfuls onto the berries filling and bake till lightly browned.

Here's an almond flour cobbler recipe that I tried a few years ago and I remember that it was very good:



LISA'S STRAWBERRY COBBLER
12 ounce bag frozen strawberries, thawed and drained
1/4 cup granular Splenda or equivalent liquid Splenda, optional *
1/2 cup butter, softened
1/4 cup granular Splenda or equivalent liquid Splenda
2 eggs
2 ounces almond flour, 1/2 cup

Pinch salt, optional, if using unsalted butter
1 cup heavy cream, whipped, sweetened, if desired

Sweeten the fruit, if desired, and place in an greased 6x8" baking dish or equivalent shallow baking pan (a 9x5" loaf pan or a 9-inch metal pie plate would be about the right size). In a medium bowl, beat the butter and Splenda with a fork until creamy. Beat in the eggs with a fork until blended. It will look curdled. Mix in the almond flour and vanilla with a fork. Dollop by large spoonfuls over the fruit. It will spread while baking so don't be too fussy. Bake at 375║ for 30 minutes or so, until the topping is golden brown. It should be quite brown for the best flavor. Let stand a few minutes to cool slightly, then serve warm topped with whipped cream.

Makes 6 servings

* If you do sweeten the fruit with granular Splenda, add 1 more carb per serving.

With granular Splenda:
Per Serving: 373 Calories; 36g Fat; 5g Protein; 9g Carbohydrate; 2g Dietary Fiber; 7g Net Carbs

With liquid Splenda:
Per Serving: 369 Calories; 36g Fat; 5g Protein; 8g Carbohydrate; 2g Dietary Fiber; 6g Net Carbs

Oops! I didn't notice the date! I think I missed seeing this thread because that was the year that my computer died and I wasn't able to read this forum for quite a while. By the time I got back online there were too many posts to catch up on and I probably missed a lot of them.
