Homemade Chocolate/Coconut/Nut Protein Bars

Hi,

I'm trying to cut the morning carbs for DH..so I made these yesterday for him.
He loved them..and said they tasted like Almond Joys.. These came from
Karen's lowcarb recipe board..and Bonnie is the author..here are my tweaks:

CHOCOLATE/COCONUT/NUT PROTEIN BARS

1 square of unsweetened chocolate OR one envelope of Choco-bake
2 Tbs. butter OR 2 Tbs. coconut oil
2 Tbs. cream or half and half or CC or just milk
3-4 Tbs. Splenda or 6 pkts of Splenda
1 cup Chocolate Whey Protein Powder
1 cup of chopped nuts: I used raw almonds and chopped and toasted them
you can use a variety or walnuts or pecans
1/2 cup unsweetened coconut (you can leave out if you want)
2-3 Tbs. SF Davinci..flavor of choice
Optional: 3-4 Tbs. flaxseed meal for the topping ..I mixed it with a bit of splenda

Melt chocolate/butter or oil in microwave very gently....You don't want the chocolate to burn. Then add Splenda and cream/milk and stir well.
Then add protein powder, nuts, coconut and stir well..It will be stiff..then you add your Davincis and stir well..Now taste this..if it is NOT sweet enough, add more sweetner.

In either a bread pan OR an 8 x 8 pan that has been line with Saran Wrap, spread out the mixture and pat until even. Then take some flaxseed meal with or without splenda and sprinkle on the top..Press it down slightly so it will stick to the bars..Then cover the top of the bars with Saran Wrap..and
chill..

Approximate counts: 5-6 carbs/15 grams of protein per bar that is cut
into 6ths..The calorie count would be around 300..per bar..so it would be a
complete meal or snack..

Little pieces could be considered healthy candy..

Carolyn, I have a recipe similar to this that I haven't made in a long time. Thanks for posting this - I think I'll give it a try! It would also be a good snack for the little guys I babysit!

MMMMmmm!! this sounds good!!

I bet you could put in peanut butter instead of chocolate and maybe use the vanilla whey powder, or the Designer Vanilla Praline would be good too!

I have several flavors of the Designer Whey so I might experiment with this one a bit - thanks, Carolyn!

You could do the peanut butter, Char..but you want it to firm up in the fridge so you
can pick it up in your hands..so let us know about your experiments..This recipe saves
you alot of money..and no SA's either..

I just made a batch of these to see how they taste. They are very good, they remind me of Chocolate No Bake cookies that I used to make for my kids. I made them just like the recipe, using coconut oil where Carolyn called for it and Almond SF DaVinci syrup with sliced almonds. I omitted the flaxseed meal on the top.
Thanks for posting Carolyn..these will be great for those sweet cravings...but healthy..

Hmm..I don't think Carbalose would work, beeb..You might do flaxseed meal instead
of the protein powder.

Pam: They aren't that attractive..and I'm not good at pics..think dark chocolate flat
brownie..

Jo: Yes, they are great for those chocolate cravings..No SA's and a bit of protein, too..

I wouldn't sub carbalose for whey protein powder just because the protein powder adds so much more nutrionally. Plus, my experience is that anything I eat with whey protein powder in it fills me up for hours and hours! These look great, Carolyn, thanks!

Another reason not to use Carbalose flour is because they're not baked. I don't think that raw flour would taste very good. Also, the whey powder is sweetened and Carbalose isn't.

I made Bonnie's Chocolate Coconut Nut Protein Bars and they were a hit. Since I had vanilla flavor whey protein powder on hand, I used chocolate flavor sugar-free syrup...yummy! They were lighter in color and very delicious. They are crumbly, so eat them over a plate. Thanks Bonnie and LindaSue.

I just made a double batch for dh's breakfast supply..I used walnuts for the nuts this week..and put them in a 9 x 9 pan..Cut them and wrap them individually when they
are cooled and hardened..That helps with the temptation of slivering them and eating
them all...LOL

I wonder why yours came out crumbly. Mine are very gooey and sticky and not dry or crumbly at all. I froze most of them and ate one straight from the freezer this afternoon for a snack. It was a bit hard to bit into, but that made it last longer.

I agree with this! I got a cookbook called Low Carb Sweets, and it looked like it was going to be a really good one, even including Psyllium Husks in some of the recipes...WELL....talk about mixing up a gummy mess of goo! It was awful. I returned the book it was so bad. I know I can always trust LindaSue's recipes.

I made another batch today because my DH scarfed the first batch up in a hurry. I think I underestimated the amount of butter, so that is why they were crumbly the first time.

wickedly good stuff!...LOL, you can call it a protein bar, but in my house its called CANDY !
(my sweeteners were just powdered Stevia and Chocolate Davinci, plus the sweetener in the Whey)

I used MiniCarb chocolate chips instead of unsweetened chocolate to help keep them from turning out too bitter from the Splenda. I will still add a little more sweetener next time, but they're not bad.

I just made these and actually press them out into a 8x8 pyrex dish and cut them into 16 squares. They are delicious! I made them just like the original recipe and used the coconut oil, cream, 6 pkts splenda, slivered almonds and topped with 2 T. flaxseed meal. Each piece is 120 cals, 9 fats, 3.75 carbs, 1.75 fiber, 6 proteins. My son and neices just loved them. Thanks

These are delicious.

I made these yesterday and had to say thanks Carolyn for the great recipe. I used walnuts, caramel davinci's, and skipped the flax topping. I used 6 pkts. of splenda, and 1pkt. of stevia. They were a big hit. I think I will be making them again today cause I hardly got any! Thanks so much for posting this!!

OOOOO, I have to make these lol.

I have and idea to make them look like a twix bar, use a mini bread loaf pan and then cut the loaf in 1/4ths.

These are great. I've been having one for breakfast every morning and I'm amazed that they hold me over until lunch every bit as much as my normal egg, bacon, and toast.

I made them as written except I had french vanilla protein powder instead of chocolate, so I added a little unsweetened cocoa. I'm going to make them with peanut butter and english toffee DaVinci next time.

I made them too, but I didn't use enough sweetener and I also didn't have enough chocolate power. These are a keeper and yes they really fill you up

Carolyn, I just wanted to thank you for theses recipes. Hubby enjoys them as part of his packed breakfast/lunch, and I made the chocolate protein bars and cut them up like candy for gift trays to my sf friends. A little elf snuck into the kitchen and ate a few off the plates, though.

And we also had some cut as candies on a nice dessert tray for our anniversary last night. Great end to a great LC meal. Thanks.
