Microwave Flax Brownie/Chocolate Cake

I played around with a Microwave Flax Brownie recipe I found a while ago (by Hani, maybe?)... don't know what I'd classify it... I think it's more cake than brownie, but either way, it's REALLY good. Flax and coconut oil, how could you go wrong?!

1/3 cup flax meal
3 Tbs. cocoa powder
1/2 Tbs. polydextrose (optional)
pinch salt
1/3 cup DaVinci or equivalent SF syrup
3 Tbs. melted butter or coconut oil
1 egg
1/4 cup sugar equivalent (I use 6-9 drops liquid sucralose)

Mix dry ingredients in microwavable bowl. Add wet ingredients and mix well. Microwave on high for 3-4 minutes, until sides pull away from bowl and middle looks fairly dry (should spring back when pushed on).

(My microwave is new & pretty good, but it takes about 4 minutes to cook...)

Recipe with coconut oil & Splenda granular:
646 Calories; 59g Fat (73.4% calories from fat); 17g Protein; 32g Carbohydrate; 20g Dietary Fiber; 187mg Cholesterol; 192mg Sodium.

With coconut oil & liquid sucralose:
622 Calories; 59g Fat (75.9% calories from fat); 17g Protein; 26g Carbohydrate; 20g Dietary Fiber; 187mg Cholesterol; 194mg Sodium.

With butter & liquid sucralose:
575 Calories; 53g Fat (73.5% calories from fat); 17g Protein; 26g Carbohydrate; 20g Dietary Fiber; 280mg Cholesterol; 545mg Sodium.

Yumm..this looks good..I might try this in some custard cups..that way I don't overdose on the amounts..

Is this more of a 2 servings yummy? A lot of calories for it to be just one...but might be nice to share w/DH.

Easily 2 servings, unless you're very hungry, me, or really need chocolate.

I made them in small Corelle baking dishes... probably about 4 inches across.

hey disnee, i just saw you were tweaking my recipe!!!! but since you give me credit, and you love them, tweak away. it is a heckuva lot of calories though!
