I like sauted onions in butter....2 eggs, and cheddar cheese. Then I top it off with some chopped tomatoes I havent done it in a while cuz I get lazy so its usually just eggs and cheese

Oh.......and some bacon on the side

I make them with a variety of ways which are a combo of any of these things:

Mushrooms
green onions
bell peppers
jalepenos
cheese
bacon
sausage
deli turkey or ham
banana peppers
tomatoes
spinach

I love mine with mozzerella cheese and mushrooms. I also like my egss pline w/ salsa OR my absolute favorite is to mix with splenda and cinamon and top with SF syrup

I buy baby portabella mushrooms at Whole Foods and saute them which are a big treat to have in my omlette (if they last long enought to make it in). Also various cheeses (pepper jack is great), bacon, spinach, tomatoes, green chile, sausage....mmmm, I'm getting hungry.

I've tried lots of things, but mainly I do a little bit of cheddar, mozzarella, and peperjack cheese with some sausage and a little sauteed onions. When I cook sausage, I usually cook a whole pound at time and just keep it in the fridge.

DH loves me to do onions, red & green peppers, and bacon along with a little cheese.

When I've fixed the family a meal I can't eat, I'll usually fix myself an omlette. And then we usually have breakfast for dinner once every two weeks or so and I let everyone fill their own omlette. They LOVE it!

Just experiment with whatever you've got in the fridge.

I sautee onions and red pepper ( I hated peppers before I started this WOE, now I love them ) then I add 2 sausage patties cut up into small pieces, eggs and cheese & sometimes with crumbled bacon on top Delish!!

One of my favorites is:

2 eggs
1 TBS cream cheese
2 oz chicken (in any form...from the night before!)
1 TBS parmesan cheese

Topped with sour cream....mmmmmmmmm

In addition to the veggies above, I've made omelettes with all kinds of vegetables, like asparagus, broccoli and zucchini too. One of my favorites though is just a plain tomato/fresh basil/jack cheese omelette - it's knock your socks off good! Once I had left over lobster (a first at my house), and I made a cream cheese, lobster omelette - yummy. Avocado and colby with sour cream and salsa on top is a winner too. You could probaby write a book with omelette recipes.

Smoked salmon and sour cream or cream cheese with capers and minced red or green onion.

Spinach and browned ground beef with onion and garlic, and whatever cheese is handy.

Guacamole, salsa, cheese, and chorizo.
