I adore tacos and fajitas wrapped in leaves of iceberg lettuce :-) No guilt whatsoever there.

As much as I like cauli-cheese pizza crust, and cheese in all forms, I really have to watch how much I use - I try not to have more than 2 oz per day.

Yeah, right, Gary, I'm quite the woman of intrigue!

Give these a try - we love them. The lettuce leaf liner is nice because 1) it keeps the hot meat from melting through the cheese shell and 2) because you're NOT using shredded lettuce, there is more room for meat, sour cream, guacamole and chopped tomatoes!

Lots of great ideas! I lay mine over the bottom of a coffee mug quickly before the cheese firms up for a salad bowl effect.

To shape the Taco shells ( I like to really stuff mine) I use a curtain rod foil wrapped to make a square bottom to the shell.
Also when still warm I will make a burrito and top with sliced avocado and sour cream shedded lettuce and salsa
Away from the taco I make hot meatball "Sandwich" using the italian cheese blend alittle powdered parmesan, dried italian seasoning.
Also a hot pastrami sandwich with dill pickle spear it is endless!!!!!

Had these for dinner last night (I used shredded jack) and they were great. Using the whole lettuce leaf inside the taco shell is such a great idea! Everything stays in place and nothing drips out.

I don't have a non-stick pan so I just put 4 cheese rounds on a parchment lined baking sheet (with a rim) and cooked until they were melty and starting to firm up. Love these, thanks Charski!

if you just want one ot 2 I found that using a dixie coated paper plates( flowerery edged plates even the store brand ) work great in the microwave, I start at one minute for a provolone slice , for a larger grated cheese one I start at 1.5 minutes

I've been nuking thin slices of colby jack for my taco shell. They are GRRREEAT! I've been eating tacos all week. I need a fool proof way to form the shells though. Sometimes I'm able to shape them and other times not. They still taste great though, I was never a fan of hard tacos before. These are so much better to me than corn shells.
