Cheeseburger Pie

Here is another of our favorite low carb recipes. If this has already been posted somewhere here, I apologize. It's sooo good that it gets requests. I found this on another low carb site maybe 2 years ago.

1 lb. lean ground beef
1/2 onion, chopped
4 slices crisp bacon, crumbled
salt & pepper to taste
1 clove garlic, minced
3 eggs
1/2 cup mayonaisse
1/2 cup half & half
8 oz. shredded cheese

Brown ground beef in skillet with onion, garlic, salt and pepper. Drain fat. Mix in bacon, being sure to break up any clumps to get a fine mix.

Press beef mixture into bottom of deep dish pie pan.

Combine eggs, mayo and half & half. Mix well. Sprinkle cheese over beef mixture in pie pan, then pour egg mix over the whole thing.

Bake 40-45 min at 350 until top is browned and set. Cool 10 min. before slicing.

This is very easy, very good, and very filling. All my requirements met. lol

This does sound fabulous..Does the "topping" set up like a cream sauce??..

Do you think substituting the bacon and using the crumbled real bacon (I get it in bulk at Costco, you know the stuff you put on salads, etc) would be good. I hate to make just a few strips of bacon for a recipe and I'm not a real bacon eater at home.

CarolynF, this is the same recipe as on LindaSue's site called Moonchild's Bacon Cheeseburger Quiche.

The topping sets up hard like a crust, not soft and saucy. Hope that helps.

I would think you could sub out the bacon with no problem. You mash it up anyhow.

Don't apologize for posting a great recipe, even if some of us have seen it before. There are always so many newbies around that haven't seen it, so it's good to regularly mention the great ones.

I've been making "Cheeseburger Quiche" since 1999; my recipe says I got it from Helen Joy at another LC sharing site. I'm sure she got it from somewhere else as well.

Do check out Deep Dish Quiche Pizza as well, if you haven't seen it (just do a search). My other favorite!

I make one that is similar, but I use plain yogurt instead of half/half to cut some calories. I make this at least 2X a month, love it!
