I use to make these or something pretty close when I was on the Atkins diet the first time around. I found it in Atkins first book. I would put SF brown sugar on the bottom before I poured in the custard, I think it was called Sugar Twin and I can't find it now, but it made a caramel sauce on the bottom. We really liked them.

Do you think it would work with the Diabetisweet brown sugar on the bottom? I was going to make a batch of these this week and the caramel sauce on the bottom sounds interesting!

OH MY Goodness..made 1/2 recipe this afternoon w/ 1/2 davincis vanilla 1/2 davincis caramel...I am totally stunned at how good they are...I added strawberry s/f syrup to my husbands......made 3 will have one for breakfast to see what it does to my sugar cravings.....abt 4-5 carbs is my estimate.

I can't believe that one simple recipe could turn into a 30 page thread! I read through to page 9 and finally skipped to the end. Somewhere in the middle, though, I made the darned things and know why everyone is going nuts over them! I did NOT wait for them to cool, and still thought they are one of the best things I've ever tasted in my life. I can hardly wait for the rest to cool, and I know what breakfast will be in the morning!

Since they are so perfect already, I'm in no hurry to tweak them... but when I do, I may try using praline DaVinci's in one batch, and I may use lemon DaVinci's or lemon extract in another batch. Meanwhile, I am out of cream cheese and will have to wait til we get to the mainland again to stock up.

I actually read through all 30 pages! Lots of wonderful ideas. These things are dangerous though. I made a 1/2 batch with a slight tweak to the original recipe using French vanilla Davinci's and they were wonderful!! Of course much better cold from the fridge. I made a batch of savory ones earlier - 1/2 with pepperoni and green onion, and 1/2 with spinach, sundried tomato and Feta. YUM! I tried one of each warm and I'll have to see how they taste cold tomorrow. After seeing all the posts about pumpkin muffins I had to try it. I made up a 1/2 batch tonight so I'll have to wait till tomorrow to taste them after they chill overnight. With the addition of the pumpkin I had slightly more batter and I couldn't fit it in the 6 muffin cups. I was curious about cooking in the microwave so I poured the rest in a little cup and nuked it. But, the ones in the oven look much nicer so I think I prefer the oven over the microwave. I also think I should have added slightly more sweetener because of the addition of the pumpkin. I didn't really think about it but my batter wasn't all that sweet with the 1/4 cup Davinci's sweetening syrup I used.

I make a batch of these once a week. I do a couple of variations. I always make 1/2 recipe. Sometimes I will add 2 T natural peanut butter and SF chocolate chips. The last ones I made in mini muffin tins and just added the SF chocolate chips. So yummy! I have to watch myself or I'll eat the whole batch.

Well, as wonderful as they were warm from the oven, they actually were even better after sitting in the 'fridge all night.

I was thinking of adding lemon extract instead of vanilla, and then taking some shredded lemon rind and soaking it in Davinci's lemon syrup, then using it as a topping on some.

The savory ones sound wonderful, as well. I can easily see me making these once a week!

I made a lemony version of these, adding lemon extract instead of vanilla, and 1/4 c. Splenda and 1/4 cup DaVinci's lemon syrup rather than 1/2 cup Splenda. They didn't come out quite as well as the regular version; and even though they are "okay" I probably won't make them again. I may still try pumpkin or savory ones; but not the lemon ones. And I will certainly be making the regular ones often!

I finally finished the pumpkin ones I made. Not a huge fan of the pumpkin. I preferred the vanilla ones better. I did buy some lime jello to try a key lime cheesecake. I also have raspberry and orange extracts so I might try some different kinds. I did make the savory ones and while they're good I'm not that impressed with the savory ones. They've been in the fridge for a week now and I've barely touched them. I would rather have the sweet ones.

Made these 1/2 of the recipe tonight with about 20 drops of liquid stevia. They were not good while warm (as everyone has said, so I was not surprised) so I can't wait to taste them after being in the fridge all night =)

Okay, so after chilling over night in the fridge they are much better. They are good, but after all the rave reviews I guess I was expecting more. I might make these again, I think they are more of a dessert though. Had one with blueberry jelly on it, kinda like a cheesecake, but more of a crumbly texture.

I love these and rarely have the same recipe twice but my 'basic' one is one 8 oz package cream cheese, 1 egg, multiple sweeteners (some erythritol, a drop or two of liquid sweetener, da vinci french vanilla or whatever just not a lot of any single one) some almond flour and semi sweet or sugar free chocolate chips.

My mom loves them and even my husband, who does not like A.S. at all likes them.

Okay, I made them again with a few tweaks, and now I'm on board!!! YUM!!

Tweaks-
I used liquid Stevia (40 drops)
I added 2/3 cup sour cream
Juice from one lemon

Tastes just like cheesecake, with a crumbly, muffin texture. Very nice. A keeper for me.

I did half in regular muffin size, and the other half in mini-muffin size for when I just want a quick bite.

these are wonderful. I was apprehensive because I was afraid these would turn out to be one of the recipes which left me disappointed, like the oopsies did, but they were totally worth it! I did like them warm and also after being chilled overnight - however, next time I def am going to add cocoa powder because after they were chilled ( make note I cut back on the splenda bc I dont care for an overly sweet taste and to me artificial sweetners tend to give that taste) they kind of just tasted like eating plain cream cheese, but with the cocoa they will be more like cheesecake.
