Leftover Beef Roast

I cooked a huge roast on Tuesday and have a good amount left. Any suggestions on a tried & true casserole or soup recipe?

Well this isn't a casserole or a soup but... I had leftover beef roast earlier in the week and I diced it small and added a small amount of chopped onion. I mixed it with mayo and a tiny bit of mustard and seasoned with salt and pepper. It was great! Kind of like making a ham or tuna salad sandwich spread only with roast beef. I just ate it in a bowl but a couple of my kids had it on bread and they loved it also. I would have probably added a little celery but I didn't have any at the time. Oh, I just happened to think, sweet red peppers would be good in this also. I am a big fan of red peppers and they are so good for you. Anyway, just another use for leftover meat.

I have made LindaSue's El Dorado Casserole with leftover cooked and cubed beef. I used cream cheese instead of sour cream and it was very good.

Oooh, that El Dorado thingy looks good... I wanted something like a casserole as my Mom is in the hospital (nothing serious) but it's something I can make while I'm home right now, stick in the fridge and the hubby & kids can throw in the oven later. Thanks for all the suggestions!!

Easy and good: Beef and broccoli stir-fry. Slice some of the leftover beef into strips. Set aside. Stir-fry fresh broccoli with some crushed garlic and maybe sliced onion until crisp/tender. Don't skimp on oil. Turn off heat. Toss the beef in with it, stir a bit, and cover. The residual heat will warm up the beef. Season with sesame oil, soy sauce, maybe some oyster sauce (there's carbs in there, so be careful).
