spicy spinache wraps.........mmmmmmm

spicy spinache wraps


2 large leafs of spinache
1/2cup chopped mushrooms
1cup lean beef mince (shredded or ground beef)
3 stalks chopped coriander (fresh)
2 green mild chillies(or 1/2 green pepper chopped)
grated cheddar cheese
1cup eggplant
tblsp curry powder/paprika/masala
1/2 cup water
pinch salt
tbls olive oil

method
wash spinache leaves under cold tap and put in saucepan with water.sprinkle
salt,close pot till spinache leaves steam. when soft put out to cool. spread pan with olive oil, and saute all ingredients together except cheese, until spices have merged and aroma start getting stronger. when browned palce into each spinache leaf and sprinkle with cheese. wrap and enjoy wonderful taste........................this is the best could be done with cabbage leafs or lettuce

That sounds very good, but the spinach leaves they sell here would be way too small to use as wraps. I bet spinach would be nice for a wrap though, because the leaves are softer and more pliable than lettuce.

I agree with Linda Sue about the spinach leaves, but the filling sounds very good. That might be nice to use in zucchini boats or something needing a meat filling! Thanks Jada.
