Chocolate Spongbob Bread with pic

Someone posted this waaaay back and I printed it and shoved it in my binder to try someday. Well, that day was today and it's AWESOME!! I don't know who posted it to give them credit, (of course Spongebob gets credit too!) but it's the best chocolate cake I've had so far doing low carb. I tweaked it a little so here's what I did:

Chocolate Spongebob Bread

1 cup golden flaxmeal
1 cup LC bake mix/Carbquik (I used Jennifer ELoff's Low Carb Bake mix)
1 tsp baking soda
1 tsp baking powder
4 T unsweetened cocoa (I used Hershey's Dutch Processed)
1 cup of sweetener of choice (I used 3/4 cup splenda, 1/4 cup eritheritol)
1/4 cup polyD (optional)
1 cup chopped nuts (optional, I didn't use)
8 T oil of choice (I used coconut oil- but any will work)
4 eggs
8 T Chocolate Davincis
1 tsp vanilla
1/2 cup sf chocolate chips (optional)

Mix the dry ingredients. Mix the wet ingredients. Combine the wet with the dry and then pour mixture into a sprayed loaf pan. Bake at 350 for 45-60 min or until tester comes out clean. Refrigerate.

Serve plain or with whipped cream.

That looks soooooo good! Thanks for posting the recipe. I have to make this. Even my husband (who is anti-low carb) thinks it looks good enough to eat and for him to say so is definitely a first!

Could someone please possibly give us the counts for this recipe? I would, but don't know how.
I know there are some optional ingredients...which may make the count vary depending on what you use (like bake mixes, oils, sf chocolate chips, nuts, sweetener, etc.) I used coconut oil, but that is a lot higher calorie I think than canola. Also, Jennifer Eloff's bake mix has about 10 carbs in a cup, some may use a different kind with less or use Carbquik. I just prefer the results I get with hers. Thanks!

By the way- this is AWESOME with whipped cream!!! It reminds me of a chocolate cake my Mom used to make with whipped cream for icing. YUMMY!

Which bake mix of Jennifer's did you use? I know she has several. Was it the one that is clone of Bisquick?

For the recipe as follows, excluding the chocolate chips:

Chocolate Spongebob Bread

Mastercook says:

Per Recipe: 3364 Calories; 286g Fat (63.0% calories from fat); 108g Protein; 271g Carbohydrate; 190g Dietary Fiber; 748mg Cholesterol; 3517mg Sodium.

Thank you dizneegirl for the counts! Where are all those carbs coming from? The flaxmeal...? I know Splenda has 24 in a cup...so you can reduce that by using other sweeteners if you have them. I think the nuts of choice for this bread would be walnuts, but if you omit them you can save carbs that way. Okay, so if you portion it like Spongebob'b bread getting 16 portions it comes out to about 5 carbs per slice if you make it exactly like the recipe states. I'm sure others can reduce it more with liquid Splenda, which I don't have. Thanks again for the counts.

Thanks for paying attention. I'm not at my own computer... we're still moving, and I'm on a laptop. Apparently this version of Mastercook is a little funky... it was counting the Carbquik and polyd as fluid ounces. I *think* I've got it OK now.

Here's the revised count... it's a little better:

Per Recipe (excluding chocolate chips): 2947 Calories; 266g Fat (68.1% calories from fat); 81g Protein; 199g Carbohydrate; 137g Dietary Fiber.

Minus the pecans, it looks like:

Per Recipe (excluding chocolate chips & pecans): 2154 Calories; 186g Fat (62.6% calories from fat); 72g Protein; 178g Carbohydrate; 128g Dietary Fiber.

Using walnuts instead:

Per Recipe (excluding chocolate chips): 2912 Calories; 256g Fat (66.1% calories from fat); 103g Protein; 193g Carbohydrate; 134g Dietary Fiber.

Thanks dizneegirl! I love this bread! It's like chocolate cake to me. So without the nuts it will be around 3 carbs per slice, if cut into 16 slices. That's better.

thanks for the carb and calorie breakdown,,, I would love to make this but Ii have to watch my calories now too. But a piece o fthis for breadfast or a midmorning snack wont be to bad.. It sure looks good.

someone mentioned that they baked the spongebob bread in a bundt pan. I have a silicon one that was part of a set Walmart sold awhile back.I made the bread in that and it was perfect. Really does look like cake when baked in a fluted bundt pan. Love this chocolate version. Next for me to try will be a german chocolate version complete with coconut frosting. Guess this recipe is moving out of the bread for breakfast and into the flax for dessert

Made this and it was wonderful. I only used 1/2 C Carbquik and 1.5 C flaxmeal, but it really helped the texture. This is the best flax bread I have ever made. DH likes it, and he isn't a big fan of the regular Spongebob's bread. Making it again today.

I'm so glad you all like it as much as I do! My DH loves it too. I'm out of chips now so I will have to do without them or make my own somehow?? I wish I knew who originally posted this recipe...I would like to thank them! For those of you using Carbquik, do you taste the Carbquik? I have a bunch of that and also some carbalose flour to use up but I don't want to waste the ingredients if it has an overwhelming Carbquik taste. Thanks!
