Sweet Pickle Relish with Zucchini
Here is the recipe I have used for Years for making sweet pickle relish. I converted it to low carb and we still love it. Let me know if you try it. Enjoy!!!
Sweet Pickle Relish made using Zucchini
10 cups coarsley shredded zucchini
4 cups thinly sliced onion
2 large red bell peppers, thinly sliced
1/2 cup non-iodized salt
Mix and let stand overnight. The next morning, drain and rinse several times. Squeeze out the excess water using your hands.
4 cups Sugar Slim or your favorite equivalent to equal the sweetness fo 4 cups of sugar .... I added some Liquid Splenda to increase sweetness.
1 1/2 - 2 teaspoons Xanthan gum
1 tsp. celery seed
1 tsp. tumeric
1 tsp. freshly ground nutmeg
1 tsp. black pepper
2 1/2 cups apple cider vinegar (do NOT use distilled vinegar)
Boil the entire mixture for 15 minutes. Put into hot jars and seal with lids.
Process in a boiling water bath for 10 minutes.
Makes 6 pints.
I always let this sit for a couple of days before opening a jar....if I can wait that long.

I love to make this in the summer when my zucchini plants go wild. Its a great way to use up all those baseball bat size zukes!!!
