Fried Green Tomatoes

Any way to make these low carb??? I have such a craving for them.

I make these 'breaded' with grated parm cheese and fried in bacon grease.

I think they taste better this way than the 'normal' method. I do the same thing with fried okra.

That is too funny! I had a craving for them too so I picked some Green Tomatoes up at the Farmer's Market and made them on Sunday. They were wonderful, but, sadly, NOT LC! I soaked them in Egg Wash and Half and Half and than put a light coating of Cornmeal seasoned with Garlic Powder, Onion Powder, Salt, and Pepper. DD loves them dipped in Ranch Dressing.

IMHO, it's not a true Fried Green Tomato unless cornmeal is involved... Maybe cut the cornmeal in half and used CarbQuik or even Almond Flour? Or, bread them in Atkin's Corn Muffin Mix seasoned with the Garlic Powder, Onion Powder, and Pepper? Hmmm....think I'll try that this week!

I use soy grits as the best substitute I've found for cornmeal breading. It has the same texture and assumes the flavor of the oil much like corn meal does. It is Bob's Red Mill brand. I find it at Krogers in the organic foods section with the other hot, organic cereals such as steel cut oats.

I like them done with a combination of ground pork rinds and grated parmesan cheese (the kind in the can is fine), to which I have added my spice mix. This is a totally low carb breading, and tastes wonderful in my opinion.

I have used soy flour, it browns really fast so you don't want to cut your tomatos to thick. I think the soy has a corn meal taste so they are pretty good. I also have done the pork rind coating also good but they brown really fast. I use them to fry zucchini with too.

I love FGTs!!! I usually use a combination of crushed pork skins, parm cheese, almond meal, etc. Works great!
