Favorite Ground Beef Recipes
I have some ground beef that I need to use today but I am tired of hamburgers and taco salad, although they are good I am looking for something different. Please post your favorite recipes.

I am making "Sue's Mexicali Ground Beef and Cabbage Pie" for supper tonight. It is really good. You can do a search and should be able to come up with the recipe.

BURGER SCRAMBLE FLORENTINE
2 pounds hamburger
1 1/2 ounces onion, chopped (about 1/2 a small onion)
10 ounce package frozen chopped spinach, thawed and well-drained
8 ounces cream cheese, softened and cubed
1/2 cup parmesan cheese (about 2 ounces)
1/2 cup heavy cream
1 1/2 teaspoons salt
1/2 teaspoon pepper
Spray a 2-quart casserole with non-stick spray. Brown hamburger and onion in a large pot or Dutch oven; drain fat. Stir in spinach; mix until well combined; add salt and pepper. Add cubed cream cheese and stir until blended, mashing it into the meat to blend well. Stir in parmesan and cream; mix well. Pour into casserole dish. Bake, uncovered, at 350║ 30-35 minutes, until bubbly and browned.
Makes 6-8 servings (6 servings - 3 usable carbs each) (8 servings - 2.5 usable carbs each)
This is a very popular dish with low carb dieters. You could add some mushrooms, garlic, a little Italian seasoning or even a pinch of cayenne pepper to jazz it up. Be sure to add any additional carbs if you do so.
Variation: This is very good with a 4 ounce can of mushrooms, drained, and a clove of garlic, minced, added.
Makes 6-8 servings (6 servings - 4 usable carbs each) (8 servings - 3 usable carbs each)
