Cole Slaw Dressing

Anyone ... What's your cole slaw dressing recipe?

I've just been using mayo, olive oil, and apple cider vinegar.

My very favorite is from Linda Sue's site:

I often- ok, always- add in 1/2 lb. of diced, fried bacon and it is just wonderful!

Mine is very much like LindaSue's except I prefer apple cider vinegar, and add a dash of garlic salt and maybe 1/2 tsp. yellow mustard to it. I also add a couple tablespoons of full-fat, plain yogurt. Gives it an additional nice "tang" we like!

Mine is a little more work...but this is what we like.

Low Carb Coleslaw Dressing

In saucepan combine:

2/3 cups Splenda (I now use the equivalent of liquid Stevia and add this along with the vinegar & water)
1/3 t. salt
1/6 t. ground mustard

Stir in:

1 egg, lightly beaten

Gradually stir in:

½ cup vinegar
1/3 cup water

Bring to a boil over medium heat, stirring
constantly; cook and stir for 2 minutes.

½ tsp. guar gum. Stir and cook an additional minute.

Cover & refrigerate.

Before serving, add to equal amount of mayonnaise.
