Low Carb Peach Pie

I bought some peaches on sale at the grocery store. I should have known better; not the right time of year for peaches. They were pretty gross, not sweet and mealy. So I decided to cook them and make a pie.

I used PolyD as my thickener, after reading the jam threads I thought it might work; it was really good. By the time the pie cooled it had thickened up just right.


Low Carb Peach Pie

3 pounds of peeled and sliced peaches (weighed after peeling and slicing)
1/4 cup water
dash of salt
4 tablespoons butter
1 cup PolyD
1/4 cup Erythritol
1 tablespoon SteviaPlus
2 tablespoons lemon juice
dash of nutmeg
1/2 teaspoon cinnamon
Put everything into a sauce pan and bring to a full rolling boil, stirring often.
Add enough Splenda to make it as sweet as you want it. I was adding the Splenda in 1/2 cup increments so I would know how much I used, but I got distracted by my husband asking me a question and I lost count.

Boil for 3 minutes, turn fire off under pot.

Make the pie crust:

Double this recipe to get a top and a bottom crust. Mix in a bowl and then roll 1/2 of the dough between two sheets of wax paper. Take the top layer of wax paper off and carefully place dough into pie plate, wax paper side up. Push dough into place with wax paper, then carefully peel off the wax paper.

Pour cooked filling into the crust and cover with the second crust in the same way you did the first. Mold the sides of the crust and crimp. Cut slits into crust to let steam escape.

Bake at 375┬░ for 45 minutes or until crust is brown.

CARBQUIK PIE CRUST
(Makes one crust)

1-1/2c. Carbquik (measured by scooping)
3T. vital wheat gluten
2 packets Splenda
Measure ingredients into a mixing bowl and mix well with a spoon.

With fork, beat in a measuring cup:
1/2c.extra light olive oil + 3T.Carb Countdown milk.
Pour all at once into dry ingredients and blend thoroughly.

Do a google search; the brand that we are buying is 5 pounds for $9.00.
