pumpkin fries

I know it sounds weird - but they've tasted the best of any of the french fry substitutes I've tried yet! I took a small pumpkin, cut it up like french fries, and then did the twice frying technique (fry until soft, drain and cool, and then fry again). They were crispier than turnips or radishes get, and had a pleasant sweet flavor. Yummy!

Sounds like sweet potato fries which are high-carb, but great!

This is an old but good thread! I make butternut squash fries like this and they are quite yummy!

You can "ovenfry" them too - just toss with some oil, spread in a single layer on a foil-lined baking sheet, sprinkle with a little sea salt and roast at 450* til browning, turning if needed.
