Coconut Oil Cookies

I'm eating some cookies that I worked out a recipe for and they are delicious. I reworked the peanut butter cookie recipe that calls for 1 cup pb, 1 egg, 1 cup Splenda. I used:

Susan's Coconut Oil Cookies

3/4 cup coconut oil
1 cup Splenda
1 egg
1 small capful vanilla
6-8 scoops protein shake mix (I used Atkins)
cinnamon for sprinkling

Beat egg. Add coconut oil. Add vanilla. Slowly pour in Splenda. Add scoops of shake mix, one at a time. I started out with 6, ended up with 8. Roll into balls and criss cross with a fork. Sprinkle with cinnamon and bake for 10 mins. @ 350. Makes several dozen, of course, the smaller the cookie, the larger the amount. I made mine small.

Are these cookies very crumbly? I made some coconut oil cookies at Christmas and they tasted good but didn't hold together at all.

I don't know the carb count. But here is the count for the ingredients. Since I Somersize, I don't count carbs anymore.

But, that said:

1 egg = 1 carb
Coconut Oil = 0 carbs
1 cup Splenda = 1 tsp. has <1 gram carb in it, per the label...so...

That's all I know. Certain times of the month, I like to have a little something and since I just bought my first jar of coconut oil, I wanted to try something different out with it.

At first, I used 6 scoops and started rolling the balls. But I saw how much oil was pooling on the paper and thought, hmmmm, I'm gonna toss those back in the mixing bowl and add more shake mix -- more cookies to eat for me!

Anyway, I hope those who try them will like them. I did it because I can't have peanut butter on Somersize. But that doesn't bother me at all.

Just a friendly warning. I made a recipe from another thread involving coconut oil, peanut butter, cocoa and splenda. The recipe made 4 small 'cookies'. They were very good and I had two of them. That evening I had some pretty bad stomach aches and had to spend quality time in the bathroom, if you catch my drift. :blush:

So if you're not sure how coconut oil affects you, eat with caution. I fry with it with no problems though.

I have to avoid sugar alcohols as well. While they don't send me to the bathroom, I CAN propel myself around the room on my own power.

I probably ate 6 of them last night, no problem at all. But thank you for the warning for all of us. I wish I had known about certain sugar alcohols before I had the sugar-free ice cream at Cold Stone Creamery one time -- talk about distress -- and all the way home from NYC. That's a long time to be on a bus with a bunch of kids, with pain and gas so bad...you know.

But as far as these cookies go, they're made with Splenda, and I guess I have had no bad reaction to the coconut oil, though I understand other people have.

Good point to make, and thanks for being such a dear...

FYI, granular Splenda is 24 carbs per cup.

This sounds good, I'd use my liquid Splenda concentrate and some Diabetisweet I think, and strawberry flavored shake mix - DH would love it!

i'm confused...is this a p-nut butter cookie? i didn't see p-nut butter in the ingredients...

edited to say: nevermind, i see that you can't have p-nut butter.

No, it's a Coconut Oil cookie that I made up, modeled after a peanut butter cookie recipe that I used one time during the holidays and loved. It turned out with the same consistency and the cookies are absolutely delicious!

That's not a silly question at all -- the health food store or any grocery store or Netrition -- it should be unrefined and virgin. I bought a jar at Walmart and it WAS NOT the kind to be using. I'm savings it for deep hair conditioning or elbows or pedicures. I bought a brand called Spectrum. It should have a slight coconut smell to it. The LouAna brand does not (it's been refined and that is why -- bad for you to eat).

Aw, that's ok. I went on to Level 2 of my Somersize program to allow for the holidays. I made those cookies for myself so that I could enjoy them while others were having all of the regular cookies I made. But they really are good.

Neither of these cookies have any flour in them. If I could endulge in peanut butter, I probably wouldn't have gotten creative and made up the coconut oil recipe
