Debbie: I just wanted to tell you that this is THE best angel food cake EVER! I make it all the time with just a few minor changes:

10 egg whites (1 1/2 C.)
1/2 tsp. salt
1 1/4 tsp. cream of tartar
1/2 tsp. almond extract
1/2 tsp. vanilla extract
1/2 C. vanilla whey protein powder
1/2 C. oat flour
1 C. Shuga~Blend (my sugar sub. equivalent to approx. 1+ cup real sugar)
10 pkts. Splenda

Excellent, excellent, EXCELLENT! Thank you so much for posting this recipe.

You are welcome, the one thing I like best is it doesn't have all those Sugar Alcohols.

Christina,

My Shuga~Blend is not a low-carb sweetener. I am on a moderate carb plan so my blend has about 1/2 the carbs as real sugar and is probably too high for you since 1 cup of real sugar has 192 carbs, mine has about 80. Additionally, it contains a moderate amount of SA's, and some people don't do well with those.

Can't wait to see your tweaks, even though I know I'm way too much of a novice to try it (maybe someday). DH loves it with sliced strawberries and a bit of whipped cream -- perfect summertime dessert.

COULD WE?

Use a combo of oat flour and oat fiber? What do you think?
I would love angel cake with strawberries.
