Need Advice Please ....

O'kay, this is only my second post and I'm very worried or maybe you would say afraid to post because I really don't know what I can and can't ask.
Or what I can or can not say.
But anyways here goes and I so hope its alright to ask.
[I know I will learn as time goes.]
I'm trying to put together foods that I can buy for my Atkins Intro, on my budget.
I can get chicken and alot of tuna.
I was thuinking I could do alot of tuna salad and chicken salad. But here is my problem, I'm not real good at recipes, or really knowing how to make salads.
SO
Does anyone, that wouldn't mind sharing, happen to have any REALLY GOOD recipes for Chicken Tuna, and Tuna Salad?
I would love to have them.
And if I'm asking this question in the wrong area, please direct me where to go.
Thanks so very Much, any sugestions, would be treasured.

You can go into the recipe room on this site and find all kinds of recipes. I've tried lots of them and most are fairly easy. HTH

These are from LindaSue's site:

TUNA SALAD
12 ounces canned tuna, drained
4 eggs, hard boiled and coarsely chopped
1/4 cup sugar free sweet pickle relish
1/4 cup mayonnaise
1 tablespoon chives, minced
Salt and pepper, to taste

Mix well and chill before serving. Makes 4-8 servings

Per 1/4 recipe: 264 Calories; 16g Fat; 27g Protein; 2g Carbohydrate; trace Dietary Fiber; 2g Net Carbs
Per 1/6 recipe: 176 Calories; 11g Fat; 18g Protein; 1g Carbohydrate; trace Dietary Fiber; 1g Net Carbs
Per 1/8 recipe: 132 Calories; 8g Fat; 14g Protein; 1g Carbohydrate; trace Dietary Fiber; 1g Net Carbs

CHICKEN SALAD
2 cups cooked chicken, cut in bite-sized pieces
2 stalks celery, chopped
1/2 cup mayonnaise
Salt, to taste
1/8 teaspoon pepper
Chopped chives, optional
1/4 cup sugar free bread and butter pickles, chopped, optional

Mix all ingredients. Chill well.

Makes about 4-6 servings

Per 1/4 recipe: 337 Calories; 27g Fat; 21g Protein; 2g Carbohydrate; trace Dietary Fiber; 2g Net Carbs
Per 1/6 recipe: 224 Calories; 18g Fat; 14g Protein; 1g Carbohydrate; trace Dietary Fiber; 1g Net Carbs

This is one of my favorite, simple recipes. I usually make it according to the basic recipe, but I found it's also good with chopped sugar free sweet pickles and a little Emeril's Essence.

Optional additions (count additional carbs):

Chopped hard boiled eggs
A little lemon juice
Diced green or red peppers
Chopped dill pickles
Chopped green onions
Chopped pickled jalapeno peppers
Diced cucumber
Chopped olives
Cashews or other nuts

CHICKEN SALAD WITH SHREDDED LETTUCE SALAD
1 serving chicken salad (my basic recipe)
1 ounce lettuce, finely shredded
1 tablespoon cucumber, chopped
2 tablespoons Roma tomato, diced
1 tablespoon mayonnaise
Dash salt and pepper

Put the lettuce, cucumber and tomato on a plate. Season with salt and pepper. Top with chicken salad and mayonnaise. Toss to combine everything.

Makes 1 serving

Thanks so very much for all the help and recipes.
I have had the Chicken Salad Sandwitches/Tuna Salad Sandwitches that are already made/prepackaged I guess you would say at my school cafeteria.
And I really like them.
So I was so hoping that I could make something almost to that.
Does that make since?
I will look into the recipe room.
In the mean time, does anyone else have any recipes that they would like to share?

Not only will you find a ton of recipes in the recipe room, but you will find them right here on this board. Take a look at the "sticky" posts at the top of the page and just start skimming some of the messages.

I know that someone (sorry I can't remember your name!) jus posted a TON of her chinese recipes. Yum!

You will find a wealth of information on this board as there are so many great posters.

Welcome!

P.S. Don't be afraid to ask questions!

Thanks alot, for all the help, with me needing recipes, its so appreciated.

I have found some recipes that I would like to try for Chicken and Tuna Salad, but I have looked and I have not found very many for Egg Salad, [Eggs are something else that I can afford on my budget] , so does anyone have any recipes that they can share with me, regarding Egg Salad? I would love them, if you do...

Thanks so much

NuttyBugg, cafeteria tuna and chicken salads are usually very very simple.

Mash tuna, add mayo

Cut up chicken, add mayo.

I'm sure all the recipes mentioned are delicious, but if I were you, I would, right off the bat, try tuna/mayo and chicken/mayo and see how close that is to what you get at school.

I am one who doesn't like anything in my egg salad. I just chop the hard boiled eggs add mayo to taste and salt and pepper!!!

Some put chopped celery, dill pickle, onion, whatever but I like it plain.

Try dipping hard boiled eggs in mix of mayo and mustard and eating them that way for instant deviled eggs...yum.

Enjoy the journey nuttybugg
