Vanilla Ricotta Creme

Anyone tried the Ricotta Creme deserts from the Southbeach Diet Book?

Craving something sweet tonight, I made the Vanilla Ricotta Creme:

1/2 cup part skim Ricotta
1/4 tsp vanilla extract
1 packet Spenda

7 g carbs....but I only ate 1/2 of it. (and added a splash of Vanilla DaVinci's

It was really quite good.

Other variations include:

adding 1/4 lemon zest

or
replacing vanilla extract with almond and adding slivered almonds

or
adding 1 tsp unsweetened chocolate and a dash of espresso powder.

I'm thinking next time I might try it using banana or coconut extract.

I'm eating it right now and I didn't even have the book! I mixed mine w/sf DaVinci vanilla, a little Splenda and some cinnamon. Yummy, especially on this nasty, cold, rainy morning we're having!

My favorite breakfast is 1/2 c. ricotta cheese with sf almond syrup, 1 T. almonds, and some cinnamon.

Why are the carb counts so high on your recipe. You list 7 grams, but 1/2 cup of ricotta is only about 4 grams.

Another good one is ricotta cheese, sf strawberry syrup and a strawberry cut up.

Delicious!!

Here's the reason for the high carb count in her recipe:

Made with whole milk ricotta: 221 Calories; 16g Fat; 14g Protein; 5g Carbohydrate; 0g Dietary Fiber; 5g Net Carbs

Made with part skim ricotta: 177 Calories; 10g Fat; 14g Protein; 8g Carbohydrate; 0g Dietary Fiber; 8g Net Carbs

Do you heat it up? It sounds a little like a cream of wheat type dish...That would bring back some good childhood memories!

I love the ricotta desserts! I eat them almost every night.

Here are some of my fav:

I mix it up with cinnamon or sf cocoa with splenda and put it in the freezer for 10 minutes to make it settle a bit and get real cold! Delicious! You can just do this with vanilla too. You can also freeze it and it is nice that way too!

I make up the vanilla ricotta dessert and top with sliced strawberries and chopped nuts.

In a small bowl put 1 tbs of ground flaxseeds or any ground nuts you like as a "cheesecake base" in individual little bowls, then I add vanilla dessert on top of the base, and I top it all off with a few tbps of SF jello!!! VERY NICE, this is my fav!

I love ricotta desserts! The best ricotta is Sargento's Whole Milk Old Fashioned Style Ricotta in the green container. It's not the same as the regular whole milk kind -- it's creamier and somewhat milder tasting and absolutely wonderful!
