Low Carb Boxed Cake Mix

I found a site that sells low carb cake mixes. Jena-Marie has a white cake mix and a creme cake mix(like a pound cake). She also has sugar free white chocolate and other stuff. I wrote to her to see if a cake that I make for Christmas, A Rum Cake would work with her cake mix, and she wrote back to say she will send me the cake mixes to try. So when I get them, I will try them and let you all know. The mix is a 18.25 oz mix which makes two layers, or a sheet cake for $4.75. I am excited to try this. JUlie

I joined her email group about 3 weeks ago. She hopes soon to put Peter's chocolate (Nestle's) on her site, so I'm waiting for that to make it before placing an order for it and for her 5# of caramel ($35). I have some Peter's chocolate now and use it only for Cindi's Brownies (who is a friend of mine and her recipe is posted on Jena's site). I use milk chocolate for it, but many prefer to use dark.

Both the chocolate and the caramel are maltitol sweetened. The Peter's chocolate is the best I've ever used for baking. *Ɯ*

<Maltitol carbs are counted as fiber.> This was stated on the website in some of the products. Looks like Maltitol is used in a lot of the products.
