Ideas for Whole Chicken Cut Up?

I have a cut up chicken that I would either like to BBQ or cook in the oven. I don't cook chicken this way very often, I usually use boneless breasts. Does anyone have any good suggestions?

I actually do this almost every week:

I buy the least expensive cuts of chicken (whole/legs/etc) and then boil it on the stove. I then drain off the "broth" through a strainer and package up the broth in 2 cup servings and place in the freezer for soups and other recipes.

I then take the skin off and peel all of the chicken off the bone. I usually will use some for dinner that night and then place the rest in 4-6oz serving size baggies for the freezer. Then, when I want to make something with chicken, it is already cooked and this is perfect for salads, casseroles and soups.

We live on a pretty tight budget so I find that this is an excellent way to stay low-carb and to always have something on-hand.

I like to use the chicken in

-blue-cheese and shredded chicken salad
-chicken "nachos"
-chicken enchilladas
-chicken salad
-chicken soups
-chicken and cheddar omlettes

Bourbon BBQ Basting Sauce

Recipe By : Dottie
Serving Size : 2

2 tablespoons tomato paste
1/4 cup vinegar
1/4 cup water
3 packets sweetener
1/4 cup bourbon
2 tablespoons worcestershire sauce
2 tablespoons dried onion

Mix everything together in a saucepan. Bring to a boil then turn down to a simmer low heat for 5 minutes until slightly thickened.
Divide in half and refrigerate 1/2 the sauce for another time.
Baste chicken every 10 minutes as it bakes.
1/2 a batch will baste about 2lbs of chicken leg quarters, so divide nutritional info by however many pieces you're cooking.

This is how I make my cut-up chicken pieces. We just love it. Wash and dry pieces with paper towel. Place skin-side-up on a sheet pan. Season with salt, pepper, garlic powder, cajun seasoning, and Mrs. Dash original. (you can use any spice combos you like). Turn pieces over so the skin side is down, and season the other side. Put into preheated 375 oven, bake for 30 mins. Flip over so the skin side is up, and bake for 30 more mins. The pieces get nice and crispy. Delish!

I make a baste of the following:

1 stick butter melted in saucepan
lemon juice

Then I baste the chicken pieces and put out on the grill. Every few minutes, I take the saucepan out and baste them again. Very yummy and inexpensive!!!!
