I got this recipie from Linda Sue's website:

TUNA PATTIES
2 6 ounce cans tuna, drained
2 eggs
1/2 teaspoon celery salt
1/4 teaspoon onion powder
1/4 teaspoon pepper
2 ounces cheddar cheese, shredded
2 tablespoons parmesan cheese (1/2 ounce)
2 tablespoons oil or so (or part butter)

Mix all the ingredients in a small bowl; chill at least 30 minutes. Heat oil and a little butter in a large skillet on about medium heat. Drop tuna mixture by large spoonfuls into hot oil. Flatten slightly and shape into patties. Fry about 3-4 minutes on each side until well-browned. Flip them very gently and brown the other side. Serve with Tartar Sauce or sauce of your choice.

Makes 2-6 servings
Can be frozen

Awesome Salmon Patties!!

I take 1 can of Pink Salmon & stir it in with 1 egg. I put some oil (your preference) in the skillet & get it hot. I round up 4 salmon patties & cook them on the skillet. I wait till their brown before flipping them. They actually stay together well if u cook them alittle longer. They taste great!

For patties, I've used ground flax meal too. Other things to add are a little mayo instead of eggs, if you like. Also add a little seasoning from dry Ranch dressing mix, instead of other seasonings. Or, sometimes I leave them plain and serve with a flavored mustard instead...like jalapeno or chipotle.

I also put my patties in the fridge for a little while before I fry them if I have time. They seem to hold together just a little better that way.
