Pizza Hot Dish

This is a recipe I got 20 or more years ago from my mother in law. She's gone now so I can't ask her where she got it but I want to thank the original chef because we've had many years of use from it. Now I've tweaked it to lower carb and can enjoy it occasionally again. I can get to be fairly higher carb depending on all the extras you might add in. It can be made to taste very much like "crust" pizza just by using your favorite toppings as ingredients.

Pizza Hot Dish (casserole)

8 ounces LC pasta (I used Dreamfields spaghetti, broken into pieces also have used elbows)
1-15 ounce can Pizza sauce (find a lc one)
1 1/3 c. Carb Options Cheese Sauce (orig. recipe used condensed cheese soup)
1 onion, chopped
ground beef (1-2 pounds)
Pepperoni
any "toppings" you want, like mushroom, peppers, olives, shrimp, sausage, etc.
1/2 pound, or more mozzarella, shredded

Brown the ground beef with onion, mix together with the other ingredients except cheese and pepperoni. Put into a greased 9x13 baking pan and top with cheese and pepperoni. Bake at 350*F. for 40 minutes.

This makes a great casserole for pot lucks or family get togethers and is always requested again.

Sorry about that!
Yes, you cook the pasta first and drain it. I just had it for lunch. I made a small casserole of it. I thought it would just be enough for 2 but it made so much that it's going to be 4 servings. I think one ounce of the pasta is more than enough for me and dh won't even try pasta yet. Guess I might find out how it freezes as there is so much leftover.

deelicious, yes, we've used both the carb options cheese sauce and also the alfredo in different recipes.

This recipe uses the yellow cheese sauce. HTH
