Vegetarian Low Carb Recipes

Help! I am cooking for 6 women and one of them is a vegetarian. Every week, someone cooks something different but its always pasta and since I just started the low carb thing-its not a good idea. I need a good recipe for vegetarians.
Any ideas?

I've made a lot of the chicken recipes here using Quorn "naked" faux chicken fillets. They have a few more carbs than real chicken but cleaner karma, maaaaan.....

There's a pumpkin curry soup at the Atkins site that's vegetarian and can easily be made vegan (just substitute olive oil for the butter) and is a huge hit with absolutely everyone who tastes it, veg*n or not.

So many side dishes: fauxtatoes, creamed spinach, etc. So many delicious casserole-type dishes. Just look through the recipes here, there are some real gems.

How about a nice Thai curry with coconut milk and lots of non-starchy vegetables, maybe some Quorn tenders, served over cauliflower rice? Gardenburger Chik'N Grills or Quorn "chicken" served parmagiana style with some Morningstar "bacon", mozzarella cheese, and a little bit of tomato sauce?

Here are some ideas:

portabello mushrooms broiled then topped with ricotta cheese lasagna type mixture and tomato sauce, baked until done

cheese lasagna using strips of fried eggplant as noodles

various salads

any delicious ground beef recipe substituting morningstar veggie crumbles

Greek spanakopita recipe (spinach with feta) baked in a covered pan without the phyllo dough

linda sue's spanish rice recipe (leave hamburger out) with cheese quesidillas (using low carb tortillas)

make your own taco salad - you ground beef, her beef substitute or refried beans

stir fry with tofu

chile rellenos (poblano peppers stuffed with cheese and covered in egg batter and baked or fried)
