I use seltzer water add some cream plus a little sugar free vanilla syrup and cinnamon and nutmeg. Just a sprinkle of the last two. We really like them this way.

It's fixable, but really gross the way they tell you to do it, I agree!

Try this:

Here's a tweak to the Atkins pancake mix recipe that I find makes them much more appealing (My wife won't eat the regular mix, either, but enjoys this recipe.)

1/4 cup of Atkins Pancake Mix
1/4 cup of Atkins Bake Mix
2 packets of Splenda
1/4 tsp of baking powder
a pinch or two of salt (I err towards 2 or 3, to be honest)
1 tbsp oil
2 eggs
1/3 cup of water and/or cream (mix together if you like)
1 tsp vanilla extract (careful to get one without sugar, if possible)

Mix it up and cook it per the directions on the pancake mix box/bag.

If you try it, please let me know what you think.
