You could make buns with Kevin's recipe.

I had a play around tonight and 'created' a sort of easter muffin which was nice. Needs tweaking tho.

i made a sort of hot cross bun by adapting linda sues flax bun recipe , this is the original
FLAX SANDWICH BUNS - Linda's Low Carb Menus & Recipes

and this is how i adapted it

approx 10/15 presoaked raisins, this plumps them up then i chopped them
1/2 cup plus 1 tablespoon golden flax meal
1/4 cup plus 2 tablespoons almond flour
3/4 teaspoon baking powder
3 eggs
1 1/2 tablespoons water
1 1/2 tablespoons oil
2 teaspoons cinammon/mixed spice. more if u like it spicy.
splenda - i had spiced da vinci so used that to sweeten and spice it

i didnt make a cross on them as i used them as a sort of tea cake but i am sure someone could come up with an idea for the cross and maybe the glaze

mix and bake for approx 15mins in muffin top pan.

Could you put the cross in after 5-10 min of baking?

Glaze- erythritol and DaVinci?

the cross is usually a flour mix so u could use the glaze as suggested above but add some almond flour for the cross shape

I make a low carb bread in my bread maker. I just tried a loaf of cinnamon raisin bread and it was great. You can always use the manual mode (so it does everything but bake it) and make rolls with it.

1tsp active yeast
3/4 vital wheat glutten
1/4 c coconut flour
1/3 c almond flour (I halved this with flax meal)
2 tbs splenda
1 egg
1/2 c room temp water.

I add everthing in this order. Most bread machines give a warning beap when it is time to add additional ingredients. I added 1/2 c raisins and used a shaker to put in as much cinnamon as I wanted. You could add some dried fruits too as I think hot cross buns have other fruits in them.
The base of this recipe I found doing a google search "the best l/c bread done in the bread maker"
