Esther--Can you post your recipe for chow chow with the zucchini--and how you do it using the refrigerator? I am very interested since my zucchini are multiplying rapidly--I used to make a high carb recipe of chow chow with cabbage and green tomatoes that I dearly loved and my family thinks I still need to make-would love to be able to replace it with something that I could have too and it sounds wonderful to be able to have it handy without canning--so do you just take out a small amount when you need it? I don't think I have seen this big jars at my walmart--I will need to look--is this in the canning dept?

Chow chow

6 cups cauliflowerets
2 zucchini sliced
2 c. sliced onions
2 c. each red & green peppers sliced
1 carrot sliced
2 c. celery sliced diagonally

sweetner to equal 2 c.
2 tsp. celery seed
2 tsp. dry mustard
1 tsp. mustard seed
1 tsp. turmeric
1/2 tsp. ginger
1 1/2 c. water
2 1/2 c. vineagar

Slice all your veggies , set aside. Take everything from the sweetner down and put in a large pan. Bring to a boil and simmer for 10 minutes,let cool well. After cooling pour over veggies . Pour everything
into your jars. I let them sit on my counter for about 6 hrs. then put in fridge.


The jars I use are the tall glass Vlasic kosher pickles empty. I have eight of them that I use for this and my pickles.

They are all still crispy after a year.

You can use any big jars you want. Kevin got some from Walmart , the same size for 97 cents but I don't know where. Ask them in different dept. My recipe makes 2 big jars.

I hope you like it.
I just read her thread again and she uses plastic gal jars from walmart.

Char I can't wait to go picking either. We are a little later here. I have blueberries, raspberries on my property. Blackberries and huckleberries grow wild here.YAY

Thanks so much Esther and Char--I am going to be doing both of these recipes!!! thanks for the pics too--I have been throwing away those big old jars for years-I could kick myself now! the hubs eats those dills froms Sams club and we buy them in the big jar and I just pitch them when empty! not any more!!! I have one now at least to start with!

I "open kettle" can the zuchini chow chow and the sweet pickles. Bring brine to boil, add veg. pieces, bring back to boil and fill hot jars. Top with lids and bands. The dill spears in the pics are Mrs. Wages Kosher dills. Those get canned in a water bath.

Love the pics Dorcas--and even more those heavy duty shelves you have to hold your delish canning results--I need those!!!

Esther--bought a gallon of dills from Sams last week-won't be tossing that jar! it will be saved for my chow chow!

love this thread!! my whole roma tomatoes will be canned next week-they are finally producing enough to can I think!!

That's great about your tomatos , mine don't ripen for another month up here. but they are covering my plants.

I just did 2 big jars of chow chow.

green beans

i did a crazy amount of green beans for the freezer-57 qt bags so far and more to pick. Next picking we'll can some of them.
The kids love them and I can eat them, too. so i have to do lots of them.

Hi all, rhubarb that I canned was a hit. Mom and I are going to town with tomatoes. The Western Pennsylvania tomatoes are excellent this year. The local farm is selling for 20$ a bushel. First bushel yesterday yielded 15 quarts plain tomatoes, 6 pints tomato jam. Sunday is second bushel( planning sweet chili sauce ). Tuesday third bushel( spaghetti sauce).
Does anyone have any other unusual low carb tomato canning recipe?

Just something I thought I'd mention. Today I saw 1/2 gallon canning jars on amazon. They were in a 6pk for $10+ and whatever shipping charges, but I didn't even know they made 1/2 gallon canning jars. They were the Ball brand if anyone is interested.

Here are some pics of our canning efforts this month. we have a total of 85 qts of beans, some frozen and some canned. Today we did 74 qts of applesauce. It took 4 of us all day!

Wow, that's amazing!! Good job on the beans and applesauce. I love home canned green beans, but I can hardly ever get them to grow here...too hot I reckon. Maybe I'll try this fall again.

Here's the spaghetti sauce we made yesterday. Sweetened with liquid sucralose and thickened with glucomanan powder. Got 50 jars from these 3 pots!

No,no! We did 3 bushels of tomatoes to get that much pulp! That can just happened to be sitting there. I really should clean my counters off but I've been sooo busy.
