this is what I use for chocolate frosting, it is a fudge recipe but is perfect for frosting. Sorry I don't remember who's recipe it is.

Table Cream Fudge
2 cans Nestle table cream (next to salsa in mex aisle)
2 1/2 c Splenda, Granular (or equivalent sweetener)
3 oz sf dark chocolate (3 squares) chopped
1/4 cup cocoa powder
2 tsp vanilla

Chill the cans of cream in the refrigerator overnight. Drain all the liquid from each of the cans into a wire drainer. Put the remaining solid cream in a heavy stainless sauce pan. Add the sweetener and stir over medium heat, bring to boil, lower heat to low but it still should be at a low boil. Stirring constantly, for 7 minutes. Just stir continually to prevent scorching.

Remove from heat and immediately add:
Chopped Chocolate pieces.
Cocoa powder, stir very fast until all is smooth (I used a wire whisk for cooking it and stirring it.
Stir in vanilla.
have all this per measured ahead of time so you can add it in right away.

There wasn't a carb count on this recipe so i don't know. The Nestle's Table Cream has an effective carb count of about 4.5 grams of carbs per can, you'll need to look on your chocolate bars to find the carb count. I use 1/2 liquid splenda and 1/2 of a mixture of Sugar subs in mine, but I know not everybody has the liquid. I think I remember each fudge square piece being 3 carbs each ?
