****** says 6 carbs per cup for the canned, although I don't think the fresh would be very different.

My "Bubbies" jar says 3 carbs per 1/2 c. with 0 fiber. How can there be no fiber in cabbage???

Sauerkraut is a low carber's bargain, according to Corinne T. Netzer's The Complete Book of Food Counts. She lists too many brands to repeat here, and her measurement value is usually 2 tbsp. Pretty much 1 carb per 2 tablespoons, with about 2 gram of fiber. I think that translated to a larger amount - say 1 cup, for example, there would probably be a bit of a difference. So, in a cup there would be about 8 grams of carbs, and probably about 7 of fiber. This is probably not exact, but pretty close.
