NITRITE & SUGAR FREE BACON?

where do you find bacon that is not cured with sugar or sodiaum natrite? I can't find it anywhere. Atkins says do not buy ham or bacon with nitrite, i've gone back several times in the book trying to find out why and what it is? Can anyone help me?

The reason being the nitrates (besides being chemicals) tend to make you retain water (sodium). That being said, we raise our own hogs and even our processor uses nitrates! We had him give us some bacon without it and its still in the freezer -- just can't eat it. Taste is unusual. So we've just decided to bite the bullet on this one and eat it with the nitrates.

I bought some nitrate-free bacon from Trader Joes's yesterday but haven't tried it yet. I have read that others really like it.

I buy low-sodium/sugar-free bacon at Costco. It is a Kirkland Brand - the red package not the blue one.
