Freezing Jicama

Has anyone here tried freezing jicama after it has been peeled? If so, did it do okay and how did you freeze it?

I haven't tried freezing it, since it's usually gone in one meal!

I'm not sure how it would freeze. I think you would have to par-cook it before freezing. It has a very high water content, and it will likely lose its texture, fill with large ice crystals and become spongey when thawed.

I wonder if you could just cut it up and dip the pieces in ice water, and quick-freeze it - sort of how they do fresh fruits at those yogurt places? I think it would still end up spongey.

Yeah, you're probably right and even if you cook it it's still "crisp" and doesn't actually cook like normal veggies. Oh well, maybe my granddaughter will eat some of it. Ha!
