Recipe for white Mexican cheese dip??
 
I love the white cheese dip you can get at a Mexican restaurant. I haven't been able to find a recipe anywhere for it, but I have a friend who says it's made from goat's cheese-but what else?? I've had people suggest maybe it's got cream cheese and some pureed jalapenos. I just love the stuff, and it's got to be pretty low in carbs-so, anybody know how to make it?

I just found it in the store today. I'm so excited about it. It's called Queso-Melt and has the instructions on the wrapper.

Ingredients: American Cheese (cultured milk, salt, enzymes), cream, sodium phosphate, salt.

Micro on high 8 oz cheese w/2 oz milk for 1 minute. Stir vigorously and continue to microwave for 1 more minute.

(1 carb)

That sounds really good-but is it hot? The white cheese dip I've eaten definitely has something in it to make it spicy, but you can't "see" any spices in it-no flecks of any color or anything.

What store did you find it in?

I'm still interested in finding a recipe to make the cheese dip myself. We have a Mexican foods grocery store in my area that just opened up recently-may have to go in there and see if anyone will help me with a recipe. Wal-Mart has goat cheese at a decent price(I love goat cheese, but hadn't been able to find it cheap enough to enjoy more than once every six months, lol!).

Guess the next step is to learn Spanish for "white cheese dip":D

Thats funny you said that. That's why I haven't checked out the Mexican store yet. I can recognize Spanish in writing, took 2 years and can't SPEAK it for anything!

Salsa de queso blanco would be "white cheese sauce".

Not sure if there is a separate word for 'dip', per se. Also, queso blanco is sometimes a specific type of mild, soft cheese (alot like mozzarella) in Mexico. It is probably what is used in the dip you speak of, however.

Spice it up with hot sauce... you wouldn't see 'flecks' if you used tabasco, for instance.

you could buy the stuff @ winn dixie or wherever and then just chop some jalapenos really, really fine. OR... just use the jalapeno juice to spice it up, the juice would thin it down, but I use jalapeno juice A LOT!!

White Mexican Dip
 
A few months back, I was wanting some of this cheese sauce. This is what I came up with. Hope you like it. I like to nuke some of the La Tiara shells for a few seconds to crisp them, then break them up to dip in this.



White Mexican Dip

1 slice onion, chopped
1 T. butter
1/3 c. cream
6 slices white American cheese
3 slices canned jalapeno peppers
black pepper to taste

Saute onion in butter in small saucepan. Add cream and cheese slices (tear slices into smaller chunks so they will melt easier), stirring until melted. Add peppers and black pepper. Blend with hand blender until smooth and serve. 16 carbs total

We have a friend thats the chef at our local mexican restuarant, they have the best spicy white cheese dip, and the cheese they use is not available in the grocery stores.

It's Land o' Lakes Smooth Melt Cheese, I have seen the giant package. I emailed the Land o' Lakes site a while back and asked them why it wasn't available in grocery stores. They said they are keeping it a restaurant exclusive! Bummer. :(

So unless you have a restaurant friend that will sell you a brick, the closest thing is that white stuff in the grocery store they are selling now, and it's not the same! No where near it! :(

This is what you are looking for

CHILE CON QUESO
1 1/4 cups

1 c Asadero cheese; shredded *
4 oz Jalapeqos, chopped; drained, OR
4 oz Poblanos, deveined & julienned
1/4 c Half & half
2 T Onion; finely chopped
2 ts Cumin, ground
1/2 ts Salt

Heat all ingredients over low heat, stirring constantly, until the cheese is melted. Serve warm with tostaditas.

(If this is made with julienned poblanos, it's called "queso con rajas de chile").

a substitute recipe

Queso Blanco

This is a white dipping sauce served in many restaurants with chips or hot flour tortillas for dipping. This is a basic recipe that uses "jack" for the texmex version and asadero for the more traditional Mexican version.

1 c cheese (Monterey Jack or Asadero) shredded fine
4 oz. green chiles
1/4 c half & half
2 tb onion, chopped fine
2 ts ground cumin
1/2 ts salt
1 serrano pepper, chopped fine (optional)
1 tb fresh cilantro, chopped fine (optional)
(2 servings)

Thank you all, for your responses and recipes. I'm sorry that I haven't done this before now, but I forgot I posted this! I just tried making dip with the goat cheese I had-definitely not the right stuff. It was grainy, not incredibly smooth like the restaurant dip. I'll just have to check with the Mexican grocery for some Asadera cheese and try this last recipe, since it's the dipping sauce that I want to make.

If all else fails, I guess I'll just have to start flirting with the waiters at Casa Mexicana:D

I have not tried this but saw it somewhere & saved it.

White Cheese Dip

1 cup cheese (Monterey Jack, Asadero or Chihuahua), shredded fine
4 oz. green chiles
1/4 cup Half & Half
2 tablespoon onion, chopped fine
2 teaspoons ground cumin
1/2 teaspoon salt
1 serrano pepper, chopped fine (optional)
1 tablespoon fresh cilantro, chopped fine (optional)


Put all ingredients in a double boiler and heat on medium. Cook until melted and well blended, stirring occasionally. Serve with fresh tostadas or hot flour tortillas.

Just wanted to thank roeluvsparis for posting the Queso Blanco recipe. I did a few mods to make it suit my taste, and it came out great.

Tonight I cooked a cornish game hen, flaked out some breast meat, put it in a Mama Lupes tortilla, and then covered it with the Queso Blanco. It was AWESOME!

Here is the mod I did for the cheese dip:

2 Cup Asadero cheese shredded fine
4 oz. green chiles
1/2 Cup half & half
1 ts ground cumin
1/2 ts salt
1 serrano pepper, chopped fine
Black pepper

I'm sure everyone has one, but when I'm hungry or just want a quick snack my "go-to-food" is Hormel Pepperoni slices it's 0carbs/net carbs and 14 slices make a serving. Sometimes I eat it by itself, sometimes I make it a "cracker" and put peanut butter on them (sounds odd I know but it's good).

Today (June 3, 2013), I tried microwaving the pepperoni until crisp and I dipped each one as I ate (almost like a potato chip) in mild cheese dip (jalapeno flavored). Gordo's makes the kind I got. Very good! 2Tbsp makes a serving and it's 1 carb/net carb.

If you want REALLY easy - WalMart sells their Great Value brand of white salsa con queso cheese dip. :)
