Flax Seed Meal Tortillas..

Thanks to Sherrielee, I decided to make some more wheaty
tasting tortillas..and used my flaxseed meal pancake recipeand
left out the sweetner.

Flaxseed Meal Tortillas

2 eggs, beaten
3 Tbs. flaxseed meal
1 Tbs. psyllium husks
1 tsp. baking powder
pinch of salt
pinch of any seasoning you want:
onion powder, garlic powder, dried chives
water..if you need it

Mix all the above ingredients together.Let set for about 5 minutes. It should be like pancake batter..If it gets too thick, then add some water.

Then spread a couple of Tbs. on some parchment paper
on a microsafe plate and make a large circle..pretty thin.

Microwave it for 1 minute or so..Then peel off.

My recipe made 5..at 2 Grams of Fiber each..

This is a tasty wrap and a great way to get your fiber count up.

What does psyllium husks do? I don't have any either.

HAHA! I can't believe with my size that I beat you.

Not sure about the psyllium husks except that they add fiber.

They help it all stick together..They are very easy to make.

You can get the psyllium husks at the health food store..They
look like sanddust..Dr. A. also recommends them..some people
mix them with water and then drink..

I just put them in the fridge...

Now, there is a controversy on the fiber count of flaxseed meal..
I emailed Bob's Red Mill..I figured out that each Tbs. has one
carb..so be sure to count that in, too..but the tortillas should
have less than a carb..

I raced here, too! If you haven't tried the Flax Pancakes, you're missing out ... they are a nice change of pace from the daily egg routine. I am eager to try the tortillas.
I can't imagine how people manage to drink the psyllium husks with water! As a true Valley Girl would say, "Gag me with a Spoon!" I have a co-worker who buys the orange flavored husks and mixes them with water and drinks it every night - she said it tastes like Tang and that she is addicted!
However, the husks are great in the pancakes. I want to mess around with this recipe and figure out how to make an unsweetened pancake into a piece of bread or toast. Has anyone tried that idea yet?

Does anybody know if I can empty my Psyllium Husk capsules and have plain 'ole Psyllium Husk? There's nothing else in these but Psyllium Husk....

Carolyn these look great! I'm going to try and do them for wrap sandwiches this weekend
I get the Konsyl unflavored psyllium at wal-mart -but I think they have their own brand now that's about 1/2 the price!

Deb..try it..it's only 1 Tbs. and it does help glue things together..
LOL..

Let me know how everyone's tortillas turn out..Maybe a good
Super Bowl snack with melted cheese in them???
