KFC Coleslaw

Ok, I got a hankering for KFC's coleslaw, so I threw this together, and it tastes pretty close...

8 cups of shredded cabbage
1/3 c. splenda
1/2 c. mayo
1/2 c. heavy cream
salt and pepper

Mix together and chill. Add a few slivers of shredded carrot if you have the carbs and the spirit moves you.

[COLOR=blue]I used to make a high carb version of KFC cole slaw before I "saw the light." The secret was to get the cabbage minced REALLY fine, each piece like a grain of rice. That was a LOT of work, and I practically burned up my big food processor. But it did make it more like KFC'S...[/COLOR]

Here's a "clone" recipe for KFC's coleslaw that I've been making since I started Somersizing - we love it! *Ü* Because I'm SSing, we can't have buttermilk, so my tweaks are in ( )

KFC Cole Slaw
8 cups Finely shredded cabbage
1/4 cup minced orange pepper (sub for carrots)
2 Tbsp minced onion (I use dried - it’s easier)
1/3 cup sugar (use equivalent)
1/2 tsp salt
1/8 tsp pepper
1/4 cup cream
1/2 cup Mayonnaise
1/4 cup buttermilk (cream)
1 1/2 tsp Vinegar (2 1/2 T red wine to compensate for omitting b’milk)
2 1/2 Tbsp Lemon Juice
I also add: 1 Tbsp horseradish and 1/2 tsp celery seed
Instructions:
Be sure cabbage and carrots are chopped very finely.
Combine the sugar, salt, pepper, milk, mayonnaise, vinegar and lemon juice in a large bowl and beat until smooth.
Add the cabbage, carrots (orange pepper) and onion and mix well.
Cover and refrigerate for at least 2 hours before serving.

* I also add I tablespoon horseradish and celery seed.

Good idea to use the orange pepper in place of the carrots. This really sounds good, have to give it a try!
