Freezing Deviled Eggs.

I "kinda" went overboard last night making deviled eggs. So my question, is can I freeze them? If so, how well do they defrost? TIA

Sharon,

I don't think freezing them would work. The mayo would separate and turn watery and the yolk would be grainy. Also I think the white would get really tough. I know you can freeze uncooked eggs to save them but never heard of cooked ones being frozen.

If I remember correctly, when I was just a young married kid (30 yrs ago) I tried to freeze Macaroni salad and it was just awful after I defrosted it. Watery and everything had separated. Had to toss it. LOL

Sorry no help on keeping them, ours never hang around long enough.

I don't know about freezing devilled eggs. Never heard that you can freeze uncooked ones either.

At Thanksgiving I kind of made WAY too many eggs too though, but before I put them together (filling in the white), I just filled enough to cover the pan I served them in & then left the whites in one bowl & the filling in another bowl. This worked much better than having the leftovers that were already put together. They tasted like I just made them. Sometimes the leftovers get the watery texture like Deannie said & that's only in the fridge.

I just got back home from skiing and this isn't great news. I made a boo-boo then. Guess that it's deviled eggs for breakfast, lunch and dinner. How long do you think that they last in the refrigerator. Sorry JosieL, Minnitonka is too far from Sacramento, Ca to bring into your office. But, I certainly would if I could as that's how many I have.

For variety, you might chop some of them up and make a tuna salad out of them or add them to a lettuce salad. Or you could make a faux potato salad and use chopped deviled eggs instead of plain hard boiled eggs.

Told you I had a lifetime supply. It's just me eating them too. Don't ask me what I was doing when I made them but it must have been a moment of insanity. My breakfast today - 4 of them, came back from a race - 4 more but I don't think that I can keep this pace up long before turning into a deviled egg. Guess what's for dinner tonight - yes, deviled eggs plus a salad and veggie.
