Caramel Corn Recipe?

I am so hungry for caramel corn ans want to make some. I have a microwave recipe I wuld like to convert but it uses corn syrup. Anyone know how to make malitol syrup? Or know a different corn syrup replacement? Or have a recipe for caramel corn that doesn't use malitol syrup? I have regular malitol, xylitol and erythirol.

well...

I eat moderate carb and I have found popcorn doesn't affect my blood sugar that much so... its an ok snack for me once in a while.

OK! I got it!

I looked up corn syrup substitutes on a recipe substitute site and figured out how to make imitation corn syrup (similar to maltiol syrup)
Here's how:

mix 1 1/4 cup any sugar alcohol(malitol, xylitol, sorbitol, erythirol, etc) with 1/3 cup water.
Stir over low heat just until well mixed and dissolved.
Use like corn syrup in ANY recipe!!

Now for the caramel corn recipe!!!
You could also make this with any nuts or seeds allowed in your plan!!

Pop 1/2 cup popcorn which will yield approximately 5 quarts popped. Keep it warm in the oven on 250 degrees in a large raosting pan.

Stir together over medium to medium high heat:
2 sticks butter
1 1/2 cups sugar alcohols (mixing them helps minimize stomach effects)
1/2 cup brown sugar alcohol
1/2 cup imitation corn syrup or malitol syrup
1 tsp salt
Bring this to a boil and up to 240 degrees
Remove from heat and stir in 1/2 tsp baking soda. Pour over the popcorn and stir well. Return to the oven for 45 min and stir every 15 min. Cool and eat! Yum!!

Nice stuff here!!! Where do you find the sugar alcohols to make this fake corn syrup? I've never seen them sitting on a shelf before.
