LEFTOVER TURKEY SOUP

I hate the recipe room here. Can never find anything. Am looking for a good turkey soup recipe. Have a carcass in my crockpot now. Fixed it early as we are going to inlaws for Thanksgiving and we wanted leftovers.

When I make Turkey Vege Soup I use the following:

Turkey Carcass
24 cups water
1 large Onion diced
5 stalks of celery chopped

Let boil for about 2 hours, remove meat from carcass, remove onion & celery. Discard carcass, onion & celery.

1 medium Yellow Squash sliced in circles about 1/8 to 1/4"
1 medium Green Squash sliced in circles about 1/8 to 1/4"
2 medium Sweet Red Peppers cut in strips then cup in half
3 cups Fresh Green Beans cut in 1 in pieces
1 Medium Onion chopped
1 Medium Head Cabbage chopped (discard really thick pieces)
16 oz can chopped tomatoes
1 lb cleaned peeled carrots sliced in circles about 1/8 to 1/4"
1 Package Knorrs Tomatoe & Basil Soup
5 cups diced turkey (you can add more w/o increasing carbs)
above stock and additional water to return stock to 24 cups
salt & pepper to taste

Bring stock and additional water to a boil, Add onion, cabbage, carrots & green beans simmer for 30 minutes. Add Knorrs Soup Mix and remaining veges. Simmer an additional 15 minutes. Add turkey simmer about 2 minutes then serve

Total count: Calories 2126, F 559, C 481, P 909
Grams:F 62 , C 181, P 227

This yields about 24 to 30 cups which comes out to about 7 grams per cup of soup. This can be frozen in individual containers for later use.
