CJ's Breakfast Pudding question....

CJ's Breakfast Pudding

Serving Size : 2

1/3 cup ricotta cheese
1 egg
3 tablespoons half and half
1 tablespoon flax seed meal
vanilla sugar-free syrup to taste
1 pinch cinnamon

Mix first three ingredients together in a saucepan - cook stirring over medium heat until thick. Add Flax and syrup. Sprinkle with cinnamon. Makes enough for two servings.

Per Serving: 4g Carbohydrate

This sounds like a refreshing change for breakfast....but am I suppose to let this cool in fridge....or eat it warm off the stove? Also do I have to add the flax seed meal?

Any ideas?

I always let it cool slightly and eat it warm. I'm sure either way would be fine....just personal preference. Most people don't have time to let it completely cool in the morning...unless they make it the night before.

No, you don't have to add the flaxseed. I think it was added with the attempt to get some added fiber.

This recipe cycles around every once in a while. It's good!

Just my two cents on this. I make it frequently for breakfast and eat it warm. I'll have to try making it the night before sometime so I can have it cold - which I think would be good too. My other comment is that it says 2 servings, but it's only 1 serving at my house! The carb count is still low enough to eat the whole thing.

I like it warm. I usually eat the whole thing too, but I never measure either. If you don't like the flax then don't add it. I usually do but I always grind it really really fine.

It really is good! I miss CJ!

I ate it warm and it was good. I agree it was basically one serving. I used heavy cream that I thinned down with some water and no flax.

However, it was a bit lumpy and a little runny. Is it suppose to be that way? Maybe I didn't heat it long enough or too much (and actually ccoked the egg to much).

Also I got about 6 carbs for the whole thing which wasn't bad for breakfast....I try to make that my biggest meal.

Oh yeah....where is CJ....man or woman....why did he/she leave?

CJ used to hang out here alot - then she reached goal, moved to another state and kind of went on with life. I email her every once in a while - it's been too long, I should send her one. She went to one of Stonecreek's pig roasts - there might be pictures somewhere of that.

I cook mine alot - it really gets thick after a few minutes, I just keep stirring it then add the flax. I've never had it be runny.

Hey, I don't always eat like a bird. You should have seen the giant taco salad I ate the other day. I had taco meat and guacamole to use up so I just piled it on, plus the lettuce, cheese, tomatoes, salsa and sour cream. I thought I'd have to put some back in the fridge for later, but nope, I polished off the whole thing! Boy was it yummy too.
