just made barefoot girls version..kinda but added a tbsp of cocoa (unsweet) and a handful of sf choc. chips and small handful of chopped pecans...

very good..i had a killer sweet tooth and was searching for muffin recipes when i saw this. Hadnt made a version since CQ came out.

very good

under 10 carbs i think...once in a while treat for sure but fit the bill nicely!

The post above about the lemon version sent me atweaking. . .

My version used 3 packs of the Lime, not Lemon, which is what I had.

And the flavor was spot on for me.

Now I need to forget the recipe again. . .a bit high cal for everyday for me.

I just made the 3 min chocolate cake ...god help me. I am going to whip one of these up for the next family birthday party ... and while everyone else is having crappy store bought birthday cake ... I can have this !! YUM !

I used 1/2 vanilla protein powder and 1/2 almond meal ... it was perfect I thought ... like a nice heavy homemade chocolate cake should be.

bumping because this is my first time seeing this and I have everything to make a chocolate one and a lemon one.. I can't wait! I thought I would never have cake again when I found out I was diabetic. This could be my dream come true.

Ohh but I only have Splenda because I can't seem to find any other sweetners in my area. Maybe I'm looking in the wrong places or I just don't know what I'm looking for I live in a pretty big area or at least near a big town - I should be able to find this stuff, shouldn't I?

Diana, I live in a pretty big town, too, and still most of the sweeteners used by people on this site are unavailable in the stores. I can find xylitol, lo han, DiabetiSweet (drugstores and Wal-Mart carry this one, too) and stevia in health food stores, Vitamin Shoppe has a very expensive product called "Shugar", but the easiest and best thing to do is order through Netrition. Very reasonable shipping and extraordinarily quick delivery.

I found Davinci's at Walmart and DiabetiSweet at Walmart too.

I tried the chocolate version and it was a little too bitter for me. I think I either used the wrong cocoa or not enough Splenda. I'm going to try again though.

You could also add vanilla extract to cut the bitterness just like in regular baking.

I have a question about the 3 MINUTE WPI CHOCOLATE CAKE. What kind of WPI should be used for the 1/4 cup wheat protein isolate called for in the recipe? Wheat Protein 5000 or Wheat Protein Isolate 8000? I am not that familiar with the products that I can tell from the recipe. I noticed that you used erythritol instead of Splenda packets that were called for in the recipe xubmitted by LCS. Could it be used in the subsequent versiojs of 3-minute chocolate cakes? How would the carbs compare to either granulated Splenda or liquid sucralose? Thanks, emmee

The one you want for the 3 Minute WPI cake is the WPI 5000.

hey guys, Im new with Atkins, Ive been on it for about 5 days now, I keep checking my breath for the fat burning smell Ive heard of:d

Do you know how many carbs splenda has?? I added 3 packets to my daily decaff americano, then came across this forum and found out that it apparently isnt carb free...is liquid splenda better? anyone know a carb-free sweetener?

Liquid sucralose is 0 carbs. Granular Splenda is 24 carbs per cup. I don't know about the packets, but I think they are slightly less than the granular.

ela, As Soobee said, the granular Splenda (cup for cup measure in the bag) is 24 g carbs per cup. The packets are .9g per pk. Each pack is = to 2 tsp sugar.

I personally much prefer the liquid splenda's to granular or packets. When speaking of liquid splenda, I don't mean DaVinci or that type syrup. They are much too weak, and add too much liquid to a recipe without cutting back on the amount of liquid in the recipe. Not to mention more expensive. EZ-Sweetz (or others found on internet) seems expensive, but you use a very very small amount. Other than DaVinci, Monin (sp?), Torani, etc you will not be able to find liquid splenda in the stores. The EZ-Sweetz can be ordered from our sponsor Netrition. Just click on the blue word EZ-Sweetz.

It is an extremely rare occasion that I use Granular Splenda anymore. (Personal preference -- too carby for me.) And tho I occasionally use the pkts that too is pretty rare. Again personal preference.

I actually usually use a blend of sweeteners which usually include Erythritol, and/or Xylitol, stevia, and splenda (either in liquid or pure form), usually along with a sm amount of Sweet One.
