Hi guys! I've tried the orginal version and LindaSue's WPI/almond flour version. I prefer LindaSue's version- nice texture. I thought the original version was a bit chewy! It still tastes a bit bitter...any ideas?

I served it 1/2 at a time- topped with an Atkins Endulge icecream cup and some raspberry DaVinci syrup...wonderful!

WOE: LC with Atkins as a guide
Start Date: 10/1/03
Did my second try tonight and used:

Ingredients -
1/4 C Almond flour
1.5 T Cocoa Powder
1/4 t Baking Powder
1/4 t liquid Splenda

2 T Melted Butter
1 T Water
1 Egg
2 T chopped walnuts
2 t Davinci SF Hazelnut syrup

-------------------------------------

The taste is great, but it came out a bit wet compared to the original. I think next time I use the Davinci flavor booster I will omit the 1 T of water.

Overall for me, the addition of walnuts and a bit more flavor takes this snack up a notch or two!

WOE: LC with Atkins as a guide
Start Date: 10/1/03
After my initial taste of my second recipe try tonight, I let the rest of the cake cool. Then I decided it needed a frosting, so I whipped together something quick from previous readings here.
------------------------------------

3 Minute Icing

1 0z. Cream Cheese
1 tsp Heavy Cream
1/4 tsp liquid Splenda

Davinci SF Vanilla Syrup to taste
1/2 tsp crushed walnuts

Soften cream cheese in bowl in a microwave, and then mix in the cream and liquid splenda. Microwave a few more seconds.

Slowly add Davinci SF Vanilla to taste. Then add the walnuts and pour over the 3 Minute Cake.

This icing adds a 3/4 g carb to the cake.

Enjoy

I just tried this and it is very, very good.

I cut the butter to 1 1/2 Tbsp, the splenda to 2 packets, left out the water and add 1 1/2 Tbsp SF Davinci's Raspberry.

Served it with French Vanilla Cool Whip. I'm not sharing this!!!

WOE: atkins again!
Start Date: 03/31/08
this is my newest addiction...i love this recipe!!
been playing around with it this past week, using what i have on hand... this is my best variation...i do not measure everything out though

1 block unsweetened chocolate square, melted
splash of sf davinci's different flavors
1 egg
1/4 tsp baking powder
1/4 cup atkins bake mix
1/2 container of bb lite 85 yogurt

increasing microwave time to about 1 1/2 mins....

i have been leaving out the water, butter and the splenda....used stevia when i was just putting the yogurt on top as a "frosting"...dropped the stevia when i began using the yogurt in the baking process...imagine my next attempt will be leaving out the choc square in order to give me more intense flavors from the yogurt and the davinci's combo...

so thanks for this recipe!!!! the possibilites with all the different flavors are overwhelming!!

Made it. Absolutely delicious.
USed Stevia so deducted the 5 carbs for the Splenda so its only 3.6. MMMM COuld be dangerous. Am going to try it with pumpkin and some spices.

I tried this and it was amazing how good it is & in just 3 minutes!AMAZING I definitely need liquid splenda to lower the carbs though.

I wonder if you could use lemon extract for a lemon cake?! If I try it then I will post the results.

I have made one with orange Davincis [to replace the chocolate and water] It was delicious I will add a bit of grated orange peel next time for more flavor. I believe the possibilties are endless I am trying pumpkin next time. I am afraid I like this too much tho., but I do use the Stevia which cuts the carbs substantially.

Jan,
Could/would you post your results on the pumpkin addition.

How much pumpkin would you use for this recipe?

Thanks, Nikki

No-this is definitely is good enough to eat all at once. I did try the lemon extract and it was awesome! I substituted the 1/4 tsp of lemon extract for the cocoa. Now I'm thinking banana and.......

Too good and too easy!

I've been tweaking too. I make it this way right now:

1/4 c almond meal
1/4 tsp baking powder
1 1/2 Tbsp cocoa powder
1/2 packet of Splenda
pinch salt
appx 1 1/2 Tbsp unsweeted coconut

1 egg
2 Tbsp melted butter
1 Tbsp vanilla SF syrup
1 Tbsp of chocolate SF syrup
a few drops of liquid stevia

I top with a little whipped cream while still warm, and if feeling generous, a strawberry. yum

I do eat the cake in one serving, but then I'm not hungry for many many hours afterward...it's very filling.

My kids and I made these and loved them! This is what we did. After we made the cakes we let them cool for a while. Then we scooped out the inside of the cake and filled it with Danna C.'s Whipped Cream made with the pudding, this recipe is in her new cook book. Then we made Atkins Choc. Butter Frosting, it's at the Atkins site in the recipe area. and frosted the cakes. Oh my they were good. Our version of Hostess.

Parrotchic, that sounds wonderful! So many different ways of making it. They all sound good. The only thing I have done different so far is replaced the water with DaVinci chocolate syrup. I think it is wonderful just plain, right from the oven. I need to get more creative I guess.

I made it too!!! Mine was very dry, BUT it is my fault. I have a 1300 watt microwave and microwaved the cake for 1 minute. 10 seconds.

Should have done it for less than a minute!!!

But it was very good, still ate it and treated it like one of those quick bake breads.

Willl I make it again... definitely. I just can't get over the fact that it is so easy to make.

Thanks again for this wonderful recipe.

I recently bought a bag of flax meal that I haven't had a chance to use yet. Might be worth a try with this recipe, but the carbs would be slightly higher than with the almond flour, but not by much. There are about 2.5 carbs per 1/4 cup flax meal and just under 2 carbs for 1/4 cup almond meal.
